It finally dawned upon me that while I was eating a scrambled egg with Summer Savory upon it this morning the annoying earthy/bitter flavor of the Savory most reminded me of common Cinnamon (as opposed to Ceylon Cinnamon).

I agree Savory has the Earthy Flavor - It is Great For Gamier Meats Wild Meat because of that Quality. I think it got used more in the Fresh Farm Raised chicken recipes because Old Timers were using it On wild Bird Shot while hunting and the Wild Bird meat are a Much Stronger Flavor the Chicken.
Sage and Savory Do Carry excellent in the Stuffing Recipe because a Little Goes a Vary Long way in the seasoning of Bread.
How Do you Find Using the Egg's as a Pallet for the Spice and Herb Taste ? ? ?
Also try cooked Pasta it Also gives a Great Base Flavor.
They are 2 very Quick ways to Test Spices and Herbs

I think eggs are a great test bed for herbs and spices. I haven't tried Pasta.

I think it seems like a great way to check the quality of your spices. As to checking how it may act when cooked in oil on chicken. Not so much.

flg you are correct in 1 point that you Do Not know how it reacts in Oil on Chicken
BUT this test is NOT that Principle its how the Individual spice is in General and you find how it acts on its own
You are 100 % Correct how i acts and plays with others is still NOT determined at this point BUT you know what to expect from the Individual items
if its a Flat Bust on its own One can rule out a Miracle performance when blended with others
