I should have realized this a long time ago, but with much current and ongoing speculation as to B&W Pepper "upping" being a means to acquire both the aroma note and flavor of KFC OR, the "light" just came on for me, as I realized that my chicken coating which consisted of only Flour, Salt, MSG, B&W Pepper, and Celery Seed (as spectacularly delicious as it was) delivered absolutely zero KFC-like note or flavor.

Needless to say, I'm drifting away from bumping B&W Pepper(s) to the sky as a means to delivering the note/flavor of KFC OR.

B&W enhances the flavours of the other spices and herbs imo so if you have the B&W pepper too low it is like lowering the other spices even tho you didn't.

Needless to say, I'm drifting away from bumping B&W Pepper(s) to the sky as a means to delivering the note/flavor of KFC OR. I bumped my B&W down to 1 teaspoon each for the amount of flour i use, i just put it back up to 2 teaspoons each and it made a HUGE difference.

Indeed, Pepper is important, but clearly one must add only enough to achieve the heat level of real KFC OR. I think a bit of Chili Pepper (Cayenne, or other) beneficially aids in this.
My current speculation as to the note/flavor is centering upon some (by weight ratio) combination of Coriander, Nutmeg or Mace, Allspice, Oregano, Sage, and either Savory or Thyme. And wilder speculation (not tested yet) considers that Mexican Oregano can 'potentially' replace Oregano, Savory, and Thyme.
Perhaps all that is minimally required is: ------------------------------------------------- 200 grams Flour ~29-30 grams of flour salt ~13 grams MSG ~3.00 grams White Pepper ~2.00 grams Black Pepper ~1.00 grams Coriander ~0.70 grams Allspice ~0.50 grams Rubbed Sage ~0.50 grams Mexican Oregano ~0.25 grams Mace (or 0.50 grams Nutmeg) ~0.25 grams Cayenne Pepper
And the primary key to unlocking the 'note' may be to increase/decrease Coriander and/or Mace/Nutmeg and/or Mexican Oregano until the magic happens.

I have been bumping up B&W pepper for awhile now and stand by it as a difference maker. 5g for 200g flour is not enough for me no matter what other people have posted as recipes. It just isn't. I agree too much will over power other spices. But at 7g in my last 2 cooks they didn't over power.
I understand the cayenne and scoville calculations. But Cayenne doesn't taste like black or white pepper. So making up heat via cayenne for me is not a direct replacement for more B&W pepper.
People should cook with what they are comfortable with taste wise. That is the simple answer.

When I bumped Black and White Pepper up to 4 grams each (in 200 grams of flour) for my cook session #15 my Wife could not eat the coating. And it did not have any Chili Pepper varietal added to it as a heat/flavor/Scoville booster. She simply said that it was way too hot. As opposed to this, my Wife did not complain about cook session #14, wherein B&W Pepper summed to 6.3 grams, and 0.30 of Cayenne Pepper was added. Instead, she immediately proclaimed #14 to be my best recipe effort to date. And additionally as opposed to this my Wife can eat real KFC OR just fine.

I have said this many time and again will repeat the words from 1930's Recipes.
Too high of amount of either Salt or Pepper Destroy the enjoyment of ANY FOOD.

If it’s the batch you air fried then absolutely it would have been pepper heavy. I cut pepper back if I am air frying. I find sometimes even frozen food that contains heavy pepper. Like salt and pepper wings etc. taste pepper strong from the air fryer. As mentioned it’s to taste. So if you feel it’s too strong then absolutely lower B&W pepper.
