Moderator and Admin, I had a hard time finding this forum section, because it is under the herb category, but being a seed it needs to be in the spice category.
That said, I picked up some Fennel Seed yesterday, and it seems far more "dimensionally" fragrant and pleasant smelling than Anise Seed, which seems highly single dimensioned by comparison. But there seems to be far less Licorice aroma for the Fennel Seed vs. Anise Seed, so my first guess is that more of it must be used.

Has anyone cooked with fennel lately? I am going to pickup some fresh caraway seed next time I get a chance. In the interim, I have half the seasoning from my last cook and have thought about just adding some fennel. I am not sure of the amount I'd try but initially I am thinking about the same as I would caraway

So in the range for sure. Having half a batch I will adjust accordingly. It for me would be a quick way to see if any merit to fennel in KFC.
