I wonder what they do with it. Their retail product is Summer Savory.

Don't skip out on it thinking it's anything like the summer savory because trust me it's not, entirely different smell to me. The summer savory really smells almost like nothing to me. If your summer savory doesn't smell or lacks flavour, try to get a better and fresher quality. Mine is packed with flavour. Last time I wanted to refill my jar though, I bought a different brand and it was bland and tasteless as you describe. If that would have been my first experience with summer savory, I would have disregarded it immediately. With regards to winter savory, keep in my mind it is rather unpopular. You will only find it online. Some have argued summer savory wasn't a thing at the time of CHS. Well if that is a concern to, then forget about winter savory. Every time you read 'savory' as an ingredient, it will always be summer savory. I've had it from two suppliers now, the first being marionkay and the second being herbies. I'd say the herbies one is more flavourful but still has that bland smell and taste. When you smell winter savory tho, it really makes you believe that the Colonel was being truthful in the ad where he says "savory" it truly does smell savory. All i will say is, if you haven't tried winter savory then try it and see for yourself how much better it is. The way i look at it, if a herb doesn't have much aroma or smell on its own then what's it going to do when its diluted in flour and cooked in hot oil? not much i reckon. This is the same reason i'm not to sure about basil, it smells amazing when fresh (super peppery) but dried it smells like tea bags.
