REMEMBER the 1970s article where the chef OR reviewer said he tasted CINNAMON? MIGHT be ONE of the 11. Who knows?? Allspice imparts a rather Cinnamon_like aroma and flavor also. As does Star-Anise. Others?

I have only used cinnamon about two times and found it to completely overpower my recipe's, even in very small amounts. I have some very high quality ceylon cinnamon quills that i'm expecting, and i'm going to give cinnamon another chance and see if it works better with the ceylon cinnamon.

It was an article in Esquire Magazine. Four (so called) flavor experts smelled and tasted cooked KFC OR Chicken, and the single highest consensus among them (with 3 out of the 4 'experts' agreeing) was that Cinnamon is an ingredient. www.angelfire.com/tx5/jcgcardman/kentucky.html

Received my Grade C5 Ceylon cinnamon today, wow! this is amazing stuff! much much better than the grocery store stuff. Tastes a bit similar to cardamom but better. i can see this possibly working alot better than cardamom.

The overall taste of the O.R imo, is a peppery, sagey, sweetness.

Now i'm thinking it was too much cause now that it has been melding for a few hours it seems to be dominating the other spices and herbs. I'm convinced either cardamom or cinnamon is 100% in the recipe. Just based on raw spice mix i think cardamom works better, i swear the mix looks like it almost wants to fizzle when i add cardamom.

Despite 3 of the 4 Esquire flavor 'experts' stating that they could smell and/or taste Cinnamon, I must hearken back to the time when my oldest Daughter commented that my deep fried chicken would taste better if I got rid of the Cinnamon. And for the very same recipe, my Wife commented that it would taste better if I got rid of the Nutmeg. I seem to recall that the critiqued recipe had Allspice in it, with zero added Cinnamon or Nutmeg.
