I made another trip to our local 'Amish Country' and this time I picked up 2 ounces of dried Lemon Grass (for only $1.25 US). I had to whip up a recipe for it so I came up with this one: Please let me know what you think of this recipe.

Lemon Grass is a strong Aroma in a essential oil and has been used in Many forms of a natural repellent to insects in mist form.
Cooking with it gives the definite Lemon / Ginger hit. In using it for many Asian flavor Wings and other side dishes.
The amount used can become vary Overpowering in a extra little amount BUT for the flavor profile of lemon and Ginger does a Great Job.
The few attempts with it in Fried Chicken we found it was a Overpower combination YOU knew it was present in the Dish. almost to the over the amount needed and we use it sparingly. In any further attempt I would use a higher Flour amount then the 2 cups flour we mixed. I would almost think starting at a 4 cup would be more in the range we needed to get a balance where the Lemon Grass would have been a suitable amount. I will say the inexperience of the use at that time in our corner could have caused the Problem and not the Lemon Grass.
As a Insect repellent we have it at the Main doors in a auto mist release spray, and it's effective to keep insects away from the commercial kitchens and the seating Areas WORKS great.
