Accent Has a website with recipes that show amount They may not show amount in flour BUT they are NOT shy in the amounts in ANY recipe your AMOUNTS look great and even low compared to other recipes accentflavor.com/recipes/

Based upon this, I will continue my typical practice of adding 15 grams of MSG to my 200 grams of flour based recipes. It's not like we eat such meals daily. Probably more like once to twice a month. I think your Right on even low its not uncommon for the Manufacture processing plants frozen food chicken breaded 1-3% MSG to weight

I had posted that video of the chef adding the MSG I do not recall what thread its in at this moment. One just needs to read how much MSG is in Potato Chips, or Campbell Soup or ANY POWDERED soup WE HAVE NOTHING TO WORRY about how much MSG is being placed into the Fried Chicken. I have always stated they Have had a amount to use per application on the Tins since the beginning. CHS used 2 handfuls for a Lug. 1/4 cup of MSG I think it worked out Per 5lbs ? Their advice is 1/4 ounce for every 5 lbs. of chicken, which is about 8-10 mixed pieces. Let's call it 9. 1/4 ounce is 7.1 grams. If 200 grams of flour (plus H&S, etc...) can coat 14 pieces, then: 14/9 x 7.1 grams = 11 grams. By this measure, 11 grams of MSG is the proper amount to add to each 200 grams of flour.

I would Try that and when you look at a % value might be low compared to some % amounts
KFC NEW AGE is Marinating CHICKEN at the Chicken Producer with MSG solution for ALL pre Made items Popcorn chicken and tenders ETC ETC ETC.
so there amount is Double used Marinade Chicken and Dredge

If you can coat 16 pieces with a recipe scaled to 200 grams, the MSG jumps up to 12.6 grams.
I'm therefore willing to round it off at 12 grams of MSG added for every 200 grams of flour whereby to achieve fully optimal results.

25 Lbs. of flour = 11,340 grams of flour
11,340/200 = 56.7
56.7 x 12 grams MSG = 680.4 grams of MSG
680.4 grams ÷ 453.6 grams/Lb. = 1.5 Lbs. of MSG (exactly)
Interesting? Random coincidence?

Please Review this Threat regard the Accent which has been Posted before. Issue which needs to be considered are Chicken weight Seasoned weight Moisture Content associated with Water and or Milk & Egg most content of coating appear to be 12% from thousands of weights done by Processor and KFC on Popcorn chicken and tenders or other items

Thanks for sharing. The amounts seem to be quite low. It would be an average of 0.156% for meat and 0.132% for fish. So for one kg of meat only 1.56 grams of MSG. If my maths is correct.
