I overheard a conversation in which it was mentioned that placing a single cut lemon wedge into a (home sized) deep fryer during the heat-up phase, and then removing it before cooking, helps to purify the oil. Is there any merit in this practice?

Does your Oil already contain Citric Acid?
Oil which contains Citric Acid it will NOT make a difference.
Oil which Does Not contain Citric Acid it will help in some way either Lemon or Lime.
As a Home use it can help save your Oil a little longer, If you don't want the extra step just Find Oils with the Citric Acid in it already. A Lemon or Lime is less headache then finding Citric Acid for Many people. I know everyone will say AMAZON AMAZON etc. Current Spice Warehouse are Having issues with getting Citric Acid, TV-P, Protein Starches, Soda's and 99 other Spices and Herbs MAJOR SHIPPING issues in Volume. YES some store retail Have items BUT NOT at a wholesale Price Point that is in line with Profit for a restaurant or Catering. Wholesale Price margins since Covid last 18 to 24 Months have jumped 30%
The Problem also is Staff if you rely on Employee's to Cut extra Lemon and Place it into the Open Fryer at work when they Turn Deep Fryers ON and then remember to take it OUT of the DEEP FRYER. I will say this YOU DO NOT OWN restaurant's in 2022. They complain they are overwhelmed with tasks. Don't do it forget to take it out, and Just don't give a crap.
Home use it can work. I cut a whole Lemon or Lime and put it in the Oil.
When the Oil is Stored I have also thrown a slice of Lemon in the Oil that is cooling down and leave it in the Oil until next use.
I'm sure you have seen items Pickled or specialty Oils with Lemon in Bottles being sold in Markets ETC as a example
