Benzaldehyde is said to express an almond like odor. Some say bitter almond. I don't get that from KFC.
Benzaldehyde has certain safety warnings. And benzene rings are often mildly to strongly carcinogenic.
I once posted about smelling sassafras with regards to the KFC Or aroma. It’s interesting that you mention almonds. Somewhat close? Safrole is also found in anise, nutmeg, cinnamon, and black pepper.

There's only one way to test a theory. Allspice and Clove free is now mixed and melding to be cooked.

First impressions as regards tasting the raw uncooked mix:
1) Not enough black and/or white pepper.* 2) Needs Allspice or Clove.*
*Commentaries:
1) Ginger has not yet heat transformed roughly half of it's Gingerol into the pungently peppery Shoagol. 2) Ginger has not yet heat transformed roughly half of it's Gingerol into the Euganol and Vanillin like Zingerone.
Retrospective thought: In retrospect I should perhaps have added even more Ginger than I did.

Retrospective thought: In retrospect I should perhaps have added even more Ginger than I did. It looks like today's going to be the day for deep frying (OK, pan frying) this recipe. I 'chickened out' on going Eugenol free, and added the following to it:
1) 1 TSP Baking Powder 2) 1 TSP Cream Of Tartar (my mild acid replacement for Citric Acid) 3) 1 gram of ground Allspice. (Eugenol + Nuttiness)
4) Plus previously I had added Red Chili Pepper infused oil to my ongoing seasoned cooking oil.
The pre cooking flavor is much improved, but now I wish I hadn't added so much Ginger to it.
We still have a few pieces of Showcase Meats chicken which will get reheated and go head to head with my creation.
But my quite recent Winston Shelton clone recipe effort is now looming in my mind as a potentially even better recipe...

Chicken 2.5 – 3Lbs Chicken (NOT Pre-Brined) Soak Chicken Over Night

Silver Interesting. Can't wait for the results. Is that green cardamom in the recipe? Yes, green cardamom. In tasting the seasoned flour I'm not detecting it at all. I added it because someone on Ken's forum is convinced that it is the source for the aroma note of KFC. I'm not convinced. Adding enough of it to matter might break the bank.

My chicken has been marinating for about an hour now. Via essentially the crazyforchicken method. Frying likely won't commence for about another 5-6 hours.

Here's the eating report for Allspice and Clove Free (with Allspice added): 1) A bit too Salty. I'll ratchet it down to 30 grams of Salt next time. The marinade/brine makes a difference here. 2) Perhaps the very best deep fried chicken we've ever eaten. Delicious plus!!! 3) The 2-1/2 day old Showcase Meats chicken can't compete, but admittedly it's lost it's luster at this juncture. 4) The Cardamom didn't bring a specifically KFC OR like aroma note along with it. It smells like a lot of my recipes smell when deep frying. 5) KFC doesn't stand a chance against this chicken. And perhaps neither does Showcase Meats. 6) My wife affirmed that this was/is the best chicken I've ever made. She said the Salt needs to be reduced. 7) The pepper level is the bomb! Not as hot as Showcase Meats, and about as perfect as I can get it. My wife said it is not too peppery, just too Salty. But then she said the Pepper burned her mouth but tasted just fine. 8) Chalk the pepper boost up to the boosted Ginger plus the 2 TBSP's of Chili Pepper infused oil that was added to the seasoned cooking oil. 9) If 30 grams of Salt still proves to be too much, then 28 grams will follow. 10) The marinating works. Thank you again crazyforchicken . 11) Once again the TSP's of Baking Powder and Cream Of Tartar were a huge plus. 12) I pulled this one out big time by adding the 1 gram of Allspice. Finally an Allspice recipe that rivals to beats Clove, Mace, and Nutmeg. 13) The high Coriander Seed, Mace, and Nutmeg helped. The Cardamom : unknown. If I had to guess, it would be that it's not likely needed. But I don't want to rock this boat!!! 14) Getting real close to home, if not already there!!!
