I have been asked many times what I know or how I know that Pepper was a issue with KFC Brown & Massey.
I have this simple answer it was NOT a issue with Brown & Massey being cheap or frugal in cost.
The pepper suppliers in more then 1 year had a series of Mold and Bacteria issues that caused Major disruptions in the shipments received and Landed in the USA.
Griffith Lab's even developed a Sterilization Process for spices for Peppercorn and other items which they thought would help the situation and did help at certain levels but was NOT a solving for the issue only band aide effect until they could help stabilize the issues.
even with the sterilization that did not stop the issue at source but pre distribution. so when major crops had the Bacteria or Mold it still caused shortages of Prime Peppercorn or the Growing time to mature Tellicherry Peppers of over 4.5 in size.
Hence Pepper Shortage
