I was asked in Private Mustard Seed is Hard to work with ?
We grind all our own Mustard Seed Fresh in Grinders Slow speed or a Blender style grinder PULSATED.
The Mustard Seed like Celery Seed BOTH FRESH GROUND has AROMATIC which are lost in Pre-Ground spices.
You Need to Understand the Spices and Herbs K.F.C. use are ALL Fresh Spices and quick turned Spices which are Vacuum Filled. The spices and Herbs which are packed are used typically in a 90 Day to 120 Day time period from Packing so they NEVER have a issue with Stale Spices and Herbs and ALL Vacuum Sealed Bags which can keep them stable and fresh for Years BUT they are turned so quick I don't think they would ever be a past due date issue LOL
Again the Seeds Celery or Mustard BOTH help create the Aroma

Then why are both lacking completely since about circa the 1970's, yet the aroma is as it always was?

Aroma enhancer, Like making a Fire log or Nail polish smell like Fried Chicken.
The Company who makes the Aroma Scent for K.F.C. says the Item is Food Grade and eatable.
In some countries it list Aroma Enhancer in the Original Chicken Ingredients

Also the Oil extract Like a Liquid Smoke are Very Powerful in enhancing the Aroma and Taste in Mixtures.
If you have NOT tried ANY Extracts WHICH ARE EXPENSIVE you will see how they can change recipes with drops.
as A test even add a few drops of liquid smoke to your flour for Deep Fried Chicken or Marinade and see the Difference
