We closed for the Night our restaurant and have followed
Step 1 of the Old Southern Fried Chicken.
we are Marinating the chicken in:
Milk Vinegar Salt Pepper Tarragon Onion Garlic MSG
Some chicken is NOT marinade in MSG same recipe as above NO MSG.
We are also using a Butter Milk instead of Milk and Vinegar. ( in Recipe No.1 we tried to recreate the Heinz Tarragon Vinegar which we know CHS used)
The Gravy Recipe we have been given is also a Milk Gravy which contains Vinegar in the Gravy (Gravy recipe says 20 minutes of continual stirring required)
While we were making the Marinade or Brine as many call it. We has Gravy from our day cooking which was still good But lower in the Gravy Bin we poured it into a Pot and slowly heated it more while adding a Vinegar infused with Tarragon (homemade) we added 1 Tablespoon to the Gravy and stirred it while warming the Beef Gravy. TOTAL TOTAL Gravy change in flavor.
It brings a NEW flavor to the Gravy compared to a different flavor like added wine to the Gravy. We even had to make 2 Large Poutine Dishes with the NEW Flavored Gravy. Staff Loved the Gravy Change - There was 1 who preferred the Original unaltered Gravy better then the Changed Gravy. It does change the Gravy.
