My perusal of the Chinese Analysis flags these items as potential ingredients (in no particular order) in what must be presumed to be a relatively more modern KFC_OR, presumably as served in China at the time of sample procurement for analysis:
1) Orange Peel 2) Ginger 3) Chili Pepper 4) Black Pepper 5) White Pepper 6) Cilantro (also called: 'Coriander Leaf') [lots of chemical footprint evidence for Cilantro. Seemingly more than for any other ingredient] 7) Coriander Seed 8) Clove 9) Savory (Note: the study says Thyme due to Thymol, but Thymol is found within both) 10) Oregano 11) Allspice Butter (or Butter Flavoring) Milk

And it was present in my last cook as well via the seasoning packet I used.

I had tried orange peel excessively. I dried my own peels even to avoid the bitter white parts of it and have the purest possible ingredient. I used it in the breading first and had no positive effect. Then I used it in my brine. It works well in a brine and provides an orangey fruity flavour. Orange zest works well with savory dishes. There is a particular greek stew with meat and chickpeas that has lots of orange in it. Delicious. BUT with regards to the OR, it didn't contribute to the note at all nor is orange a flavour compound I get from KFC.

I'm relatively convinced that no single/isolated ingredient contributes to the note. And I'm also relatively convinced that no single/isolated ingredient (this side of Salt, Pepper, and MSG) stands out whereby to be definitively identified.

And I'm also relatively convinced that no single/isolated ingredient (this side of Salt, Pepper, and MSG) stands out whereby to be definitively identified. Agree. But the lack or omission of a truly note-contributing element should be noticeable. I use Celery Seed, but I don't think it is a contributor. But it adds pure deliciousness and I don't want to leave it out. Is Orange Peel a must for you, or just nice to have?

I personally think there are Spices which have the citrus flavor profile in it already.
BUT adding Orange peels to a Brine is a great thing I agree.
LEMON PEPPER a citrus based item gives the best of BOTH worlds and has BEEN USED BY KFC overseas

As to Orange Peel, my two 'personal best' cooked recipes of my own design both contained it, albeit that one recipe which contained it, but which featured Savory in place of Allspice (as for Glen & Friends secret Canadian source) had zero note. And at that time I directly proclaimed that Orange Peel does not in and of itself present the note, and ditto for Savory. There seems more likelihood (from my cooking experience) that Allspice will pull in the note than for any other individual ingredient, including Clove. But I've had Allspice in cooked recipes that did not develop any note. My best (as to the note) recipes have also contained no garlic... My personal best recipes have notably all contained Celery Seed, but a recipe I made at the urging of my Wife, which used only Salt, Pepper, MSG, and Celery Seed, exhibited zero KFC_Like note, despite being likely the best recipe I've ever tasted (albeit being a bit over on the Celery). I can't claim the Celery Seed recipe as among my best, as it was not solely of my formulation. The Celery Seed only recipe had clearly evolved its own "note" of absolute deliciousness, as I had commented at the time of my review of eating it. And it was delicious squared when served cold. As cooked (mainly my Wife's recipe, from memory): 200 grams Cake Flour 30 grams Salt 3 grams White Pepper 2 grams Black Pepper 4.5 grams Celery Seed If I was to do it again: 200 grams Cake Flour 30 grams Salt 3.5 grams White Pepper 2.5 grams Black Pepper 3.5 grams Celery Seed Then I would work to merge between the two recipes if the latter recipe loses the unique (as in,not KFC) note....

The Chinese Lab result was sent to university Chemist and Food Science Labs BY ME PERSONALLY
Information from below was sent and the BOTTOM list was compiles FROM 20 different Peoples reviews who work in the Industry.
After the Lower result list was compiled a second letter was sent out which asked IF THEY WERE TO MAKE KFC CHICKEN from the China report WHAT SPICES WOULD THEY USE?
We do not have ALL the results back yet.
BUT WE TOOK THE LIST PROVIDED BELOW AND HAD A SPICE COMPANY use the ITEMS and make a SPICE BLEND FROM THERE EXPERINCE AND R&D to make a SPICE.
