we were asked to make a Old Fashion Fried Chicken and Low Salt, I said we have a OLD recipe from the 1925 Time period and it only contained : Salt Pepper and minimal ingredients BUT it also had fresh chopped Garlic, Onions, Parsley, Thyme.
I was told one of the Old Ladies had a recipe and could we come and view it and possibly make her recipe. I have been raised with the understanding respect your elders and help them as much as we can. So I personally attended the Facility and met a few elderly to ask what they wanted for a meal and likes dislikes and allergies.
The recipe I received from the Lady had Poppy Seed in the Flour. plus other ingredients. I took notes from her request. I said the smallest Batch I could make would be 27 Pieces, In our small Pressure cooker and for easy. I wanted to be on a cautionary side NOT knowing what to expect. So what I thought would be best was make 27 pieces of her recipe and 27 pieces of the OLD TIME RECIPE.
Just Prior to finishing another elderly lady Joined our Table and said she had recipes from there family, which has note been shared for 19 years since she has been in the retirement homes. So she went and returned with a OLD OLD Plastic Recipe Card Holder and Recipes. She looked for the recipe with NO avail and was frustrated so I asked Can I please view the Card and Box she agreed. I looked at a recipe for Chili and inquired it looks vary good. I was informed that it was a recipe from their family in Marriage. I was informed it was a 1960's Recipe. In the Box ware OLD cards from Spice Companies from the 1930's. I took a photo of the one recipe and placed the items in the Box as I was short time.
So we prepared the approximately 60 pieces of chicken and extra side dishes. Old style Mashed Potato, salads ETC and Apple Pie.
The Poppy Seed Chicken was Amazing and the Simple Chicken Fried was amazing. As a sign of respect I stayed for their supper. More interested in asking how the meal was.
They Loved it and commented that They wished the Boring cooks would use more seasoning in the kitchen. LOL LOL
When I was about Done the One lady who had the Recipe Box came to me and said she was sorry for earlier not finding the Recipe and Handed me another recipe card box and said this is the recipes you should see. It has recipes which were Family Favorites. Asked me to take the box and view it and return the Box after. Her comment was I deserved to look at the recipes which were the world to their family because I made such a Great Meal. She indicated that many recipes were Vary large amounts as it was from Cafeteria Days where her mother cooked. In conversation her mother cooked at many restaurant's also.
The recipes are interesting BUT i see common spices in many recipes and they overlap in others common way cooking was done. the Majority ALL all in teaspoon volume for spices and the Large recipes use cups or fraction cups
vary interesting info as to what was used in old times. There are MODIFIED WAR TIME recipes due to shortage of items?
this all makes sense with Claudia mentioning they could not get spices sometimes and CHS knew what to do.
Dehydrated Spices were A very vary big influence also
