I just air fried 3 chicken legs which were not coated or spiced.
Then I started spicing them with a number of different things, and these are my findings:
Celery Salt tasted great alone and in combinations, as expected Allspice mixed with each of the other spices demonstrably muted their flavor and never gave me any sense of the note. I'd bluntly have to call it a failure. Star-Anise was much more of a failure than Allspice in combination with anything, as well as alone. Can you say "Wrong!"? Cumin wasn't too bad, but must not be tried alone. Smoked Paprika is simply awful in this application. Wrong, Wrong, Wrong!!! The best spice I tried by far was an Amish blended "Poultry Seasoning" mix, which was truly a joy to experience on Chicken. I think it would have been even more perfect if it's oregano was reduced. Celery Salt plus the Amish Poultry Seasoning mix was also excellent. Nothing (alone, or in various of combinations) evolved any semblance of the note of KFC Original Recipe
The Amish Poultry Seasoning ingredients list is as follows by descending weight:
1) Salt 2) Coriander 3) Oregano 4) Sage 5) Black Pepper 6) Celery Seed 7) Cumin 8) Thyme 9) Mustard Powder 10) Turmeric
A big thumbs up to my local Amish community for their excellent Poultry Seasoning blend. Each of these ingredients work together well. My preference would be to demote the Oregano down to about where Thyme or Mustard Powder is sitting,

I did a cook without Allspice but I used cinnamon and clove. As I have said talk about wrong. Cinnamon for me is wrong. Unfortunately I couldn’t tell if not having any Allspice was a problem or not.

Or better yet, it might look like this. With ingredients better aligned to the actual order of the delicious (albeit a bit oregano forward) Amish Poultry Seasoning. Still adhering to compliance with the 40 ounce bag, and with 3.50 grams of "other than B&W Pepper".

Since my taste test concluded Allspice was a bust, I'm now wondering if Paprika might serve some purpose formerly presumed to be the domain of Allspice?

What Allspice was doing was tossing up loads of cinnamon, nutmeg, and clove, and by this means, obliterating the flavors of the other H&S within the Poultry Seasoning and/or Celery Salt. I've noticed that both the Eula Gibson/Gordon and Ledington recipes contain zero Allspice.

Allspice is a More Power Punch ingredient when used in Higher volume and typically more used in the BBQ Spice Flavor Profile.
It has been used in Many other recipe BUT typically what I would consider descent volume amounts and or specific flavor designated.
Allspice was used by CHS and also made reference in some Recipes I have which was in His possession.
there is CHS BBQ Sauce recipe that was in the Museum which used 3 Cups of Allspice, and a Squash Recipe which used 3/4 teaspoon from my investigation and also a dessert recipe but can't remember it currently

Now that being said, I’m not sure it needs to be there either. A combination of nutmeg and something like cardamom may be better. Allspice could have been an early cost saving substitution.

Is there any truth to the rumor of CHS buying the secret recipe from Eula Gordon (or Gibson) for $1,200?

CHS never admitted to Buying a recipe from ANYONE, that I ever read saw in Print or Personal words from CHS or Claudia and in the Tons of Personal meeting I have had with many people who worked with CHS and new him never mentioned it and if there was a mention all discredited it, and more stated CHS Did learn from his mother and Mother In-Law, He did mention he learned from some Bakers things CHS was very skilled with ALL MEATS, which has been vary under spoken. HE could cut up a chicken faster then many Butchers, and Cut his own steaks, Plus he would Pick out ALL the Hams he used. So he Got his Fathers genes CHS also was a keener with the spices. NOW could have he possibly watched and learned from Eula or others and copy the recipes I would say YES. No different then CHS got out done By Leon when he cooked for him. Many have also said CHS stole the recipe from Ms. childs. Something that many people overlook is that the early spice hawkers salesmen and pitchmen snake skin salesmen were also Pharmacy trade representatives. They left the documents and printing they had for them and many suppliers had broachers which tried to explain the uses of new spices and herbs.
