We were asked to Make a OFF the Rail recipe
We are NOT limiting to 11 Spices and Herbs for a reason. Many people have suggested many things and this is our Kitchen Sink off the Rail event.
we are going to experiment on Chicken and Ribs
1¹/² teaspoons white pepper
¹/² teaspoon ground Coarse
¹/⁴ teaspoon pepper Fine
³/⁴ teaspoon allspice
1 teaspoon cayenne pepper
Pinch of chili powder
1 teaspoon cinnamon
¹/⁴ teaspoon garlic Dehydrated ³/⁴ teaspoon ginger, ground
³/⁴ teaspoon nutmeg, Finger Grated 1 teaspoon dry mustard
2 teaspoons paprika
¹/² teaspoon sage, fresh
¹/² teaspoon thyme, fresh
2 tablespoons chopped
fresh parsley
1 teaspoon grated orange peel
2 tablespoons onion finely diced
1 teaspoon Mint Leaf
Flour
75% wheat Flour 15% Corn Flour 10% Almond Flour
Salt to be determined % by taste MSG 2%
Milk and Egg Powder

The OFF the RAIL mix was mixed using ALL Fresh Herbs Chopped and Slow cut in a hand blender (OLD FASHION CRANK)
we did NOT want to pulverize of over heat the Fresh Herbs.
we fresh chopped Dill, Fennel, Green Onion, Sage, Parsley, Rosemary, Thyme, Onion, Garlic, Basil, Cilantro, Mint
They are ALL not being used in 1 recipe they are being used in more then 1 recipe.
THE AROMA is NOTHING you have experienced using Powdered spices NOT even in the same universe.
we have done ONE pressure cooked chicken for a test run

Test Drums OFF the Wall Aroma and Flavor is FAR FAR superior then ANYTHING ever achieved from a Spice and Herb powder we super fine chopped the Fresh herbs and sifted it in the flour 4 times prior to Coating the chicken ALL Fresh Herbs were coated in Flour Heavy the though was extra coat the fresh items as a heat barrier from oil

Recipe using Blended Spices
Milk & Egg Warsh 1 cup milk or water 2 eggs 1/2 tsp Sugar for adhesive
1 3/4 cup flour AP 1/4 Cup Corn Flour
3/4 tsp. White Pepper (1/4 Butcher Grind, 1/4 Fine Grind) 1/2 tsp. black pepper (1/4 Butcher Grind, 1/4 Fine Powder) 1 tsp. salt (Fine) 1/2 tsp MSG
1/2 tsp. Celery Seed 1/2 tsp Garlic Dehydrated (1/4 Medium Grind, 1/4 Fine Grind) 1/2 tsp Onion Dehydrated (1/4 Medium Grind, 1/4 Fine Grind)
The Celery, Garlic, Onion will be started at a 1/4 tsp each first
Salt, Pepper, Celery, Garlic, Onion added to 11 Spice & Herbs for adhesive
1 tsp. Cream of Tarter (mixed with 11 Spices & Herbs)
11 Herbs and Spices:
4 tsp. barbecue spice (McCormick) 6 tsp. seasoned salt (Lawry’s) 6 tsp. poultry seasoning (President Choice) & (Dehydrated Organic Blend)
1/2 tsp. curry powder 1/2 tsp. mace 1/2 tsp. paprika 1/4 tsp. oregano Leaf - crushed 1/4 tsp. thyme Leaf - crushed 1/4 tsp. sage 1/4 tsp. savory 1/4 tsp. marjoram
We will try the Seasoning Barbecue Spice, Seasoning Salt, Poultry Seasoning All mixed together and start first Batch at 60% of the Spice for a Base Test with 50% of the Celery, Garlic, Onion

Specially the seasoning salt. I often wondered if seasoning salt was in OR and replaced with garlic salt. I have used seasoning salt a couple times and liked it in the recipe.

Many times there have been Question to Season Salt being used and was it used?
Analogy to thinking from Viewing many things over many years.
The ONLY questionable interest question that comes into mind.
If Bill S from Marion Kay was a straight shooter, and being upfront. Maintained He was given a Bag of spices from CHS which he poured onto a sheet of paper, then viewed it. to distinguish spices.
I have viewed thousands of Spice Blends in many forms, in many countries.
Season salts ARE a very impossible to figure out. As for picking a taste out after its been in a FULL bag of spices and herbs. my comment is lets go looking for a needle in a Hay Stack?
Looking at a Bag of spices and herbs that are individual and 11 in count. There is a Good Likely hood you will view 6 or 7 out of 11, even if you put them through screens and sized the spices.
So when you mix and Match what is mixed Seasoning Salt, Barbecue Seasoning, Poultry Spice. You now just increased the potential of 15 never spices to 11 give or take Plus you then added different Blends of the same spice ground differently and grown possibly different and aged who knows how long.
It would be like pouring out Bell's Seasoning, Old Bay Seasoning and many other Blends and figure it out? Which I have tried and attempted. Its not like going to a Nude beach and matching a Pair of twins ?
I have person knowledge from Claudia that CHS would often have to Blend two of the same spices from different companies.
SO a Guess and Guess again
This is just a attempt at what comes about

There is some great potential with this recipe, We are going to add in Pumpkin Pie Spice and cut down the BBQ Spice, and Poultry spice. It needs a Pepper Increase also. Over ALL taste was Very very good chicken BUT can be better it does have note. The dilemma we had was NEW oil today WHICH IS A BAD THING WITH FLAVOR as the NEW oil sucks the seasoning. It was a miscommunication with staff as they did Pure cleanout of Pressure cookers. We could NOT get enough seasoning into the OIL even doing the chicken wings we cooked. I would NOT have a issue EVER serving this chicken at any function as it was VERY GOOD. It would rank in the better of chicken recipes cooked It has Potential to BE SO OVER THE TOP as I kept nibbling on Bird parts

deepfriednew101 making me hungry looking at that chicken. Sounds like you found a good base to build on. Pumpkin pie spice is something talked about quite a while back. I never have tried it but it makes sense. Excellent review
