And this is where it leaves me:
The way I'm seeing it, as guided by 13 solo recipe cooking attempts, and in looking back at those of my recipes which worked, and those which failed, this one seems to come the closest to mirroring my success stories while at the same time limiting the ingredient list to 11 (or 12) H&S. I've tried Sage high, Sage middle, and Sage low, and Sage does not ever seem to benefit the development of the flavor note, or the development of the aromatic odor note of KFC, so now I'm thinking of eliminating it.

The Cayenne Pepper is optional and "to taste". There is freedom to skip it, reduce it, swap it out for something like Ancho or Dried/Crushed Chili Pepper Flakes, etc... I would leave it in at full measure and as Cayenne for at least one go at it.

Mexican Oregano is also (and about equally) called Mexican Sage. But since it is neither Sage nor Oregano, this recipe is Sage free.

I'm of the opinion based on my cooks that Sage if exists. It is low in the mix and appropriately ranked by Glen, Jolly Chef and others. To me if set high it dominates. As mentioned Silver. It doesn't bring forward the note.

Oregano - Mexican Sage has a deep Note then the Sage the Sage is more a woods lower base then the Mexican Oregano.
I think everyone is relying on the words from Shirley where she says in the Video CHHS mother Sage and Savory ?
I personally Have seen little use of Sage or Savory in CHS Recipes WITH THE EXCEPTION when the spices were in Blended Items already Poultry, Italian Herbs Seasoning, ETC.

The specific intent of the above seen recipe is to eliminate both Sage and Savory. This presumes that I'm interpreting what deepfriednew101 just said correctly when he stated that "I personally Have seen little use of Sage or Savory in CHS Recipes ..."

There was ONLY 1 or 2 recipes where CHS used Sage and it was Fresh Sage not a Powdered Sage.
It are two Stuffing Recipe, I have seen where references where STUFFING was mentioned BY CHS and in the recipes ALL FRESH ITEMS were used Onions, Parsley, Sage, Thyme were the Fresh items he used, in the STUFFING

I'll just put it this way, ledington recipe is what got me all into this, i played around with that recipe for a while changing the quanities etc. The next ingredient i added was Sage and as soon as i added that to my recipe i was shocked at what it did, made the cooking aroma much stronger and smelling much more like kfc.
Sage is a key ingredient imo, just simply rubbing pepper and sage on chicken makes an amazing seasoning, what other herb does that? It also was a common chicken seasoning and something that everyone would have had.
