In Canada we are having a SERIOUS SERIOUS spice shortage to the spice companies They are having to get other spices to replace the previously sources spices. TODAY I experiences a MAJOR issue that was NOT caught by STAFF we have a catering Job which required a Beef Stew as one of the items on the MENU. our stew requires a .05 chilli powder. in the Recipe We make 15 Gallons of Stew for the Meal typically when requested This Morning I tasted the Stew and IT WAS SO OVER POWERED with CHILLI its almost NOT editable and the situation was caused BY a employee who did not taste the NEW CHILLI powder. I will take the Blame as I did not intercept the NEW SPICES WHICH were received and was not informed the spice company had a new chilli powder. THE CHILLI Powder is CRAP and there is NO OTHER explanation. it is SO OVERPOWERING even at a .001 amount it would be too strong. they also had to exchange our Cinnamon and the desserts are a Second Rate item. I WILL AGAIN state this IM not one to say that certain spices make a difference I HAVE CHANGED MY OPIONION IT MAKE A MASSIVE DIFFERENCE AND THERE IS NO COMPARISION. The Damages to OUR CATERING serving the FOOD that would be severed with these replacement items is UNACCEPTABLE currently started making change to the MENU to accommodate the situation. It was NOT that the employee screwed up they measured correct the spices are that DIFFERENT its NOT my scale either its a Very expensive Scale used in university's and Labs with a $3500.00 price tag and I checked the calibration this AM ITS LOW QUALITY CRAP SPICES

Wow, that Mettler Toledo appears to be a serious scale. It reminds me of precision scales I used and/or witnessed in industrial chemical labs. That name brand makes costly high end stuff. And the one pictured does not appear to be bottom end for them. Very nice indeed!!! I certainly would wish to be at that level scale wise...

we weight tons of spices and try and be exact BUT in ALL reality when home cooking using the Medicine Thumb cups or same teaspoon or Tablespoon leveled in Half ball measuring spoons its close enough.
They do make a Great Scale and very accurate. The key is consistency with what ever you use.

Please Find below what the Government of Canada just sent me in relationship to importing Allspice in a Large Quantity
ANY ONE WHO tells me spices Have NOT changed from the 1930-1980's when FDA regulations is FULL OF CHICKEN FEATHERS
Pre 1980 FDA regulated PURE SPICES which mean Pure to 98% or Higher
NOW they are ALLOWING in Allspice example UP TO a 30% Filler Items
THIS CRAP would have NEVER EVER NEVER passed Pre 1980's Law and Regulation for Import
so AGAIN I will STAND on my aspect that if SPICES are anywhere from 15% to 30% fillers and extracts can be as Low as 5% real Ingredient HOW MUCH HAVE spices needed to be increased for the Filler and impurities
Allspice or Pimento, whole or ground, shall be the dried, full but unripe whole berries of Pimenta dioica (L) Merr. and shall contain
(a) not more than (i) 25 per cent crude fibre, (ii) 5.5 per cent total ash, (iii) 0.4 per cent ash insoluble in hydrochloric acid, and (iv) 12 per cent moisture; and (b) not less than 2.5 millilitres volatile oil per 100 grams of spice.
