After 10 years of frying chicken to crack the Colonel's recipe, I've learned a lot of things about frying chicken.
One of the things I've learned is that marinating the chicken is one of the key stepstones in the whole process.
When I fry chicken without marinating it, the chicken is tastless, the skin is crunchy and no (KFC) smell whatsoever (recognize this?).
Many will mix the "11 herbs and spices" with their flour and fry it up. I was always surprised by people saying "Oh, it was very tasty when I fried up that and that recipe (and burned the spices and herbs)" because when I tried that method, it always tasted very disappointing. The problem with mixing the spices and herbs with the flour is that: IT DOES NOT WORK!!
There are many essential oils, fragrants and aroma's in your fresh spices and herbs. When you put these spices and herbs in oil that is 160-180 celsius degrees (320-356 fahrenheit) it will dissolve and evaporate all the essential oils from your spices and herbs and what is left will burn instantly.
I always thought people talking about "essential oils, fragrants and aroma's" were those freaky spacy alternative crazy people. So I ingnored it. As a result, my chicken was always tastless.
When you compare your unmarinated chicken that is fried up with the "11 herbs and spices flour mixture" and the real KFC, you will notice that your meat is tastless and the KFC meat is very tasty. The reason for this; marinate the chicken!
You will have to marinate your chicken first with salt, msg and your "secret" spices and herbs mixture. Then you bread your chicken with a good coating so when you fry up your chicken, the flavours will stay inside your chicken. Only then your chicken will smell delicious and will be very tasty! (Well... depending which spices and herbs you are using of course.)
I always marinade my chicken for 3 days in the refrigerator. Only then all the flavour of the "11 spices and herbs" are absorbed by the chicken. I have discovered that you can even wash off all the spices and herbs, bread your chicken and fry it up without losing any flavour...
