Has anyone attempted to add a small amount (perhaps 0.1 gram for a recipe scaled to 200 grams flour) of Citric Acid to their note seeking spice mix?

it is Only a Preservative for the spices of flour and helps after cooking preservative.
Have used it in Oil and flour spice Mix. it does slightly give flavor to the Food, It does not make a hand stand effect compared to MSG
It's NOT the SILVER BULLET solution to KFC aroma or flavor if ANYONE THINKS it will do that NO IT WILL NOT. it was only incorporated By NEW AGE KFC and after Brown and Massey Time KFC
we have mixed citric acid at 1% of weight when used in the Dry Ingredients
it does HELP stabilize and Preserve OIL

Citric Acid is an ingredient which I believe to be present within the KFC powdered egg and powdered milk mix. I wonder how much Citric Acid is in this mix? And I wonder if I could add a pinch of Citric Acid to my "real" milk and egg wash? And if I did so, would gloves be required while soaking the chicken pieces in the egg wash? And lastly I wonder if it will be beneficial to the note?

It was NOT part of the NOTE with the exception it has been used to Preserve Lards and Oils since the 1930's
Its added to the NEW AGE KFC to help preserve the chicken in the steamers and help retain Flavor
I have Values that have been added into the Brine, and Dry items BUT not at fingers reach and as far as I'm concerned it NOT a Original item to worry about except in Oil

I revisited the dissertation which deepfriednew101 provided for us a number of months ago regarding adding citric acid to oil, and on a dissolved ppm basis it looks like the optimal way to do this is to add a maximum of 0.16 grams of Citric Acid per gallon of oil. But it is not just to be tossed in as a solid crystal. It should be dissolved in a small amount of water (guessing 1 TSP), and added to the oil BEFORE beginning to heat it up. WARNING: Do not toss acidic water into piping hot oil, as it will rapidly boil and potentially splash back at you, conceivably to cause blindness or serious burns.The peer reviewed dissertation indicated that about 50 ppm of citric acid is soluble in oil. 50 ppm means 50 parts per million parts on a weight for weight basis. Cooking oil weighs about 7.20 pounds per gallon. Water weighs about 8.34 pounds per gallon A gallon of water weighs 3,785.4 grams A gallon of cooking oil weighs 7.20/8.34 x 3,785.4 = 3,268 grams 50/1,000,000 x 3,268 = 0.1634 grams of Citric Acid for 50 ppm Call it 0.16 grams

we dilute it in water and add it into the cool oil and keep stirring it as it warms
It may be a wrong way but it was explained to do it that way by Health officials

The question of Citric Acid has surfaced in person E-mails and Messages ?
The Citric Acid Does Not give a Silver Bullet answer to either the NOTE or the Taste of KFC Chicken.
Citric acid was used in the Fats and Lards Oils in the 1930's to preserve All from going rancid.
In the Last 3 years or more KFC NEW AGE has been using citric acid to Preserve the chicken Poultry, and also in the Seasoning Mix so that when the chicken is cooked they can preserve the chicken longer in the steamers for sale. Adding even 15 minutes of additional time with chicken in a steam is a massive savings of cooked product.
as for adding that special wow factor to the chicken taste it DOES NOT make the Silver Bullet answer it does give a flavor enhancement BUT not major enhancement like M.S.G does
