I’d say there probably is a point where it starts making the chicken bad tasting if anything. It would be nice to find what the spot of reasonable is. I’m guessing between 6 and 7g for our recipe but the ratio of WP to BP also will play role. I’m not too afraid to push my leftover to effectively 3.5 and 3 in the name of testing.

Countries who use the same amount of Black, White, Pepper are adding Red Pepper.
This is they way they List this Spices:
MSG, salt, Ground Black Pepper and Ground White Pepper, Powdered Garlic, Red Pepper)
when I wrote the country for Definition of the Label break down they said the Black Pepper and White Pepper WITH THE WORD AND MUST legally define it is the same volume in the mix. with Garlic powder and Red Pepper being under the amount of the Black and White Powder BUT BUT BUT the Garlic powder, Red Pepper COULD be Higher then the Individual amount of Black or White Pepper in the Combined and NOT higher then the Combination of Black and white pepper added together. I hope I explained that clear enough
SAMPLE EXPLANATION ONLY
5g Black Pepper, 5g White Pepper 10g Combined Black and White Pepper
7g Garlic Powder 6g Red Pepper
ONLY SAMPLE VALUES the 7g Garlic Powder and 6g Red Pepper even though higher then the 5g Black, 5g White Pepper DO NOT OUT WEIGH the combined 10g Black and White Pepper

They also said it Does NOT mean that the Garlic Powder and Red Pepper have to necessary mean they could NOT ALL BE 5g

I get ingredient substitutions based on either culture or local availability. So to that extend I do agree that the full recipe isn’t the same in all countries. But the pepper would be a head scratcher for me. Why would the ratio of White and black pepper change in other countries? I fully believe pepper is a major player. If that’s true, why change it?
Where as Savory for Thyme or Marjoram for Oregano all I can see as country or regional substitutions.
Any idea?

Savory was definitely More A Canadian item and CHS was in Canada. But Prior to that Savory was used in the other regions but more a Seasonal item.
Oregano and Sage were the two that were interchanged
Bill Summers was the pinacol to state what spices and herbs were MOST LIKELY used in the 1930's ERA.
Claudia often said in Canada CHS used the SPICES and HERBS he was familiar with and used often also. BUT this was more a personal conversation speaking as Claudia was NOT a spokes person like CHS was except when she spoke about the Claudia Sanders Cafe'
CHS spoke more about Paired items
Salt & Pepper Garlic & Onion & Celery Rosemary & Thyme Basil & Oregano Dill & Lemon Sage & Savory
CHS spoke about using combinations of SPICE AND HERBS to make a great season
Basil, Oregano, were more a combo item like Garlic & Onion

Why would different countries or regions use a different White to Black Salt ratio?

I agree that it makes no sense at all to vary the White/Black pepper ratio by country. Other herbs and spices yes, but pepper no.

If you have eaten KFC chicken around the World its different.
Some of it has to do with Import Laws and some is for regional taste
You think it would be a simple thing when they CLAIM its all the same in every country
