How is it this guy uses 13 Tablespoons of Spice and Herb and Salt. Per 2 Cups of Flour.
32 Tablespoons of Flour for 2 Cups / 13 Tablespoon's on spice and salt. spice
Basically a 30% Herb and Spice to Flour ratio ?
He says its GREAT and Reviews Say Great Chicken
AGAIN how CAN PEOPLE ON THE FORUM continually mathematical do a 6% Formula from a 26OZ theory?

Volume to volume and weight to weight have no basis for comparison.

Wow, the guy in the video deep fries his chicken at 375 degrees F. for only 1-1/2 minutes, then bakes it for 1 hour at 350 degrees F. That hardly seems like deep frying.

It appears that he is using the straight up nephew Ledington recipe, and presuming TS to mean tablespoon(s), just as for the Chicago Tribune. That explains it both factually and perfectly. It also explains why it comes out of the deep fryer in one and a half minutes. More than that and with 4 tablespoons of Paprika it comes out burnt tasting and dark red. I know from experience.

Yes lots of spice and that high heat will not burn the chicken as bad with only 1 1/2 minute time. It will sear like a steak.
He then bakes for 1 hour.
BUT my point on the cooking was his volume of spice and also the bake method which can work the KFC Cvap machine are to keep chicken warm and rest with typically a 45 Minute time period for chicken in there. when unsold.
quick sear will make a golden brown BUT if it was cook for over 2 minutes it would be a Brown quick.
He claimed the flavor is great and so did reviews and that's a heavy spice salt mix.

The Basil in the Ledington recipe has always intrigued me. I now have some Basil and want to see if it can be used in the place of Allspice and perhaps also Star Anise. But I think Ledington got the quantities switched between Basil and Paprika. And II also think that due to reddening of both the chicken and the oil Paprika was eventually dropped. What do you think with regard to these two phenomenon?

What do you think with regard to these two phenomenon? Basil for me has always been on the list of things I'd like to try. I buy basil being in everyone's kitchen in 1939 before I buy star anise. The paprika soiling oil, I don't think anyone contests that. Or that likely paprika got lowered, replaced or removed because of that. Whether Ledington screwed up the 2 weights maybe. I'm just happy people are looking at the Ts as teaspoons largely at this point.

Paprika in the NEW AGE CORPORTATION was changed to EXTRACT to save the Shortening Back in the early day when the collectramatic engineers had been asked with Kraftco, Sexton, to figure out the pepper shortage and the Shortening issue.
KFC had Major cost with the Oil break down and changing BUT FOR HOME USE THIS ISSUE IS NOT AS BAD as you are NOT cooking the volume of chicken KFC does.
Rosemary, Parsley, Oregano, Thyme were THE HIGHEST USED Sage and Basil were also High contenders in the sale in 1939 retail and Butchers.
Claudia Recipe aka Ledington recipe can work with Tablespoons BUT not for 2 cups of flour. plus add MSG
