Somehow I simply can't get away from including Celery Seed within the mix. Celery Seed is my Wife's favorite Poultry spice, and after nearly 43 years of being married to her, I've come to favor Celery Seed spiced Chicken as well. The 40 ounce bag makes it easy to include Celery Seed.

Silver when is your next cook? I'm struggling with doing what may be my final cut recipe on the usual suspects. Or, doing a fun one with the couple seasoning packets I found. I'm really tempted to do a fun attempt with no guarantees We have a frozen whole chicken thawing in the fridge presently. A few days from now at most if things go as expected. I've come up with so many ideas in the past few days that it will be hard to pick the actual recipe for what will be experimental cook session #12 from among them.

I'm really tempted to do a fun attempt with no guarantees I've taken essentially nothing but experimental and exploratory diversions since my cooked recipe #4. Some have been wild diversions. The very best among them being the simple 200 grams of cake flour scaled recipe with only the usual MSG, Salt, White and Black Pepper, and 4.5 grams of Celery Seed. If I do this one again (as I likely will) I will add only 4 grams of Celery Seed. Amazing flavor for such a simple recipe. Here's how it will look next time. 200 g. Cake Flour 27.0g. Salt 15.0g. MSG 3.00g. White Pepper 2.00g. Black Pepper 4.00g. Celery Seed And to simplify it even further I may just add 5 grams of White Pepper, and skip the Black Pepper. 200 g. Cake Flour 27.0g. Salt 15.0g. MSG 5.00g. White Pepper 4.00g. Celery Seed

Would this be the Marion Kay mix that was being sold to roughly 200 KFC franchises (out of about 600 extant at that time)?

I'm in the same boat I have 3 different "serious" recipes I have been tweaking since the last cook. Really just different profile of the same or similar ingredients. Then I have the "fun" recipe. The one thing that I have been playing with is pepper. My last recipe was 2.5g of each. I have been thinking of 3.5g White and 2.5g Black Pepper. And of course a couple versions of my recipes feature this higher pepper. Part of this is based on re-watching all of the Glen trials where he tested various recipes. More than once he said the recipe didn't have the initial pepper punch of the OR. I looked at what he said he cooked and either 2.5 or 3g of White Pepper was the relative amount. I also think that some folks are using a higher amount of cayenne to make up for it. I saw that in Dustin's or one of his versions. So thinking no cayenne or very little but up the white pepper.
