In ALL if CHS chicken there has Always been Cracked Black Pepper it is a Key to higher Aroma and Flavor. I would change out the Anise Seed for Dill Seed or Dill. I believe that flg has been getting good results with Anise Seed. I'm not sure if I have it set at a decent quantity.

you won't know until you try?
I always suggest Make your mix then divide it in to 2 separate amount
Mix 1/2 of it with 1/2 of the amount of Flour you intend on using
Then cook the First Base Seasoned Flour with 1/2 of your chicken you are cooking - cook it and then try it.
then if you need to adjust anything make a adjustment on the 2nd Batch / cook the remaining chicken and compare it to the first Cooked attempt

It's not as potent as Star Anise to me.

I'd be tempted on Fennel before Dill seed TBH.
I tried this the other day. Had a nice good sniff of fennel and I could smell the licorice undertones plus an earthy tone. Real nice, as mentioned I like Fennel in pizza seasoning. Then I opened my Anise Seed and gave it a good sniff. Licorice big time and I couldn't smell anything else. Went back to smell the Fennel and just couldn't. The anise seed just permeated my senses. And to me it is more mild than Star Anise

The Fennel is a great spice and when you get a OD on the nasal from one spice you loose the sensory for the others again. I would agree that Fennel in Pizza or spaghetti is unreal My only comment on the Fennel is it was Not a common shelf item it was rarely even mentioned in the 1930's NOT to say it may have not been as the ONLY real place it was used was Butcher Shops for Sausage. It was Sold More in the Industrial Size Tins of Old Day. I would say that finding a Vintage 1930's same Whole Fennel Tin is one of the rare Tins

I keep thinking about the overall formula for the 40oz bag. The numbers I have been working so far and keep coming back too.
MSG 16oz, Pepper (W+B) 12oz, H&S 5.4oz, Salt 6oz, Garlic Powder .6oz = 40oz or 2.5lbs
At a higher level
1LB MSG, 3/4LB Pepper, 3/4 H&S (inc. salt, garlic)
I can't help I like when things come out as nice round numbers.

Also, I obviously stick with my 2.6oz of Garlic Salt. Which is the 13 missing in the WS story bias I have. I break it out as per labeling.
So I guess I like both even numbers and sticking to my garlic salt bias.

I also came up with a couple ways of making this into a 26oz recipe. The most humane: MSG 6oz, Pepper (W+B) 12oz, H&S 5.4oz, Salt 2oz, Garlic Powder .6oz = 26oz - add I+G to this Most likely any or all of MSG, Pepper and H&S where reduced and replaced by more salt plus I+G and extracts. This could look like anything TBH. And nothing like the original
Add to try to stay true to the labeling. If MSG came down, I think Pepper had to as well and likely some of the H&S. All extracts.
