Breast: 41% of chicken by weight. 17% bone. Thigh: 26% of chicken by weight. 25.5% bone. Leg: 16% of chicken by weight. 33.5% bone. Wing: 13% of chicken by weight. 46% bone.
Lets assume a 2.5 Kg. (2,500 gram) Chicken
Breast: 2500 × 0.41 x (1 - 0.17) = 850.75 grams meat plus skin Thigh: 2,500 × 0.26 × (1 - 0.255) = 484.25 grams grams meat plus skin Leg: 2,500 × 0.16 × (1 - 0.335) = 266 grams grams meat plus skin Wing: 2,500 × 0.13 × (1 - 0.46) = 175.5 grams grams meat plus skin
Total = 850.75 + 484.25 + 266 + 175.5 = 1,776.5 grams of meat plus skin
Percentage of edible meat plus skin = 1,776.5/2,500 x 100 = 71.06%
Answer ~= 71.1% (rounded)
To make it easy to remember assume 70% to be safe. Therefore 70% of a whole/dressed chicken is edible meat and skin

Rounded for a 2.5 Kg. Chicken:
Avg. individual uncooked Breast as meat plus skin = 850.75/2 ~= 425 grams Avg. individual uncooked Thigh as meat plus skin = 484.25/2 ~= 242 grams Avg. individual uncooked Leg as meat plus skin = 266/2 ~= 133 grams Avg. individual uncooked Wing as meat plus skin = 175.5/2 ~= 88 grams

If we assume ~7.5% combined water and fat loss during cooking, then the net edible meat plus skin for a 2.5 Kg. Chicken by individual piece is appx.:
Breast = 393 grams Thigh = 224 grams Leg = 133 grams Wing = 81.4 grams

I'm assuming that for wings all of the above includes the end segment that is typically cut off and discarded, so wings will yield perhaps on the order of 75% of what has been calculated above on average if my assumption is correct.

In the end you will be eating ~65% of the weight of the whole/dressed chicken you paid for.
393 + 224 + 133 + (81.4 x 0.75) = 811
811 x 2 = 1622
1622/2500 = 0.649

so Buy chicken tenders and there will be 0% Bone 100% chicken meat. with 12% Flour seasoned coating on it. Making it worth 112% chicken and seasoning flour
