What is your best guess as to the total Sodium Chloride (common Salt) added to the lug along with 25 Lbs. (11.34 Kg.) of Cake Flour?
1) We know that there is a bag or box of Salt added which weighs 3 Lbs. (1,360.8 grams). 2) We know that there is Salt within the added 26 Oz. bag (740 gram bag), but we don't know how much. 3) There 'might' also be some Salt within the added 18 Oz. (510.1 gram) container of powdered milk and powdered eggs. But if there is we don't know how much. 4) If there is any brining or marinating going on for KFC_OR chicken (wherein the 2022 Canadian Ingredients listing indicates that there is not) this would inevitably add yet more Salt. 5) If the chicken is 'Pumped' (fluid injected) before KFC even receives it, it is likely that the injectant contains yet more Salt.
If you sum up everything (sans the Chicken) that goes into the Lug (in grams) it totals to: 1,360.8+740+510.1+11,340 = 13,950.9 grams
My best current guess is that on average 3.50 Lbs. of Salt are present within the Lug from all sources derived.

A rather ballpark typical recipe when scaled to 200 grams of flour (which means 13 grams of recipe mix) generally seems to consist of:
3 grams MSG 1.25 grams Salt 1 gram additional Salt derived from 1.25 grams of Garlic Salt 7.75 grams of other H&S Total = 13 grams
To this is then added 24 grams of Salt.
Summing it up yields 13g. mix + 24g. Salt + 200g. Cake Flour = 237 grams (of which 26.25 grams = Salt)
26.25/237 = 0.11076
Switching to full scale KFC_OR:
3.5 Lbs. presumed Salt = 1,587.6 grams Salt
1587.6/13,950.9 = 0.1138
0.1138/0.11076 x 26.25g. Salt = 26.97 grams Salt (let's round this to 27 grams)
So if you are not introducing additional Salt via pumping or marinating or salt added to the egg wash you should be adding 27 grams Salt to 200 grams of flour instead of 26.25 grams.
You can do this via adding 24.75 grams of extra Salt instead of 24 grams. Or just formulate to 27 grams Salt via whatever means you desire.

You can also look at it this way:
KFC is not adding Salt to 25 Lbs. of Flour. They are adding Salt to 25 Lbs. of Flour plus 18 ounces of powdered egg and powdered milk. That is 26.125 Lbs.
3.5 Lbs Salt (from all sources derived) divided by 26.125 Lbs. = 0.134
200 grams flour x 0.134 = 26.8 grams of Salt

One computing method yields 26.8 grams Salt in 200 grams Flour, and the other method yields 27 grams Salt. Pretty close overall.

I end up around 26g salt into 200g in my cooking now. So those seem like valid numbers to me.

Its Not common Salt ?
Fine Salt is used.
KFC does NOT used Common Salt
Everything every discussed and Proven from KFC Manuals and 99X have shown 3Lbs of Salt to 25Lbs of Flour.
the ONLY exception was OLDER Marion Kay Seasoning and Claudia Sauder's Café Mix which showed less salt.

Common Salt simply means that it's NaCl (Sodium Chloride). It says nothing of the grind. Grind rock salt to a powder and you have fine salt.
