I was asked to re-post the video showing mixing KFC spices in KFC kitchen and amounts

159g Milk and Egg Powder
13.2 Lbs Total plus 159 g Milk / Egg Powder
5 / 1 Ratio Flour / Seasoning or 20%

NOW occasionally some places have mixed 1.5 KG of Spices into 5 kg of Flour
NOT RECOMMENDED BUT IT HAPPENS. BUT MAKES THE BEST DAM CHICKEN

THIS IS MY POINT for the 100 TIME its Volume based % Percentage based measurement NOT 26oz to 400 Flour which is NOT the same Percentage value mixed which makes a 6.5% spice to Flour I totally agree. I've 1.5x a 200g recipe and its outstanding! I'm ready to shut the door and stick with it from here on in, no s**t! cfc

26 Ounces, or 740 grams = 1.63 Lbs.
25:1.63 = 15.34:1
1/15.34 x 100 = 6.52% Seasoning Mix

The Video was NOT a Canadian KFC and the flour Bag they used was NOT 25LBS in the Video

DID YOU SEE THE SIZE OF THE BAG OF FLOUR IN THE VIDEO ? ? ? Yes, and it is easily 5 times larger than the tiny 5 lb. flour bags on our shelf. We've had 50 Lb. flour bags, and I see them all the time at our local Amish bulk foods store. They are not all that huge. A full level cup of cake flour weighs ~0.2755 Lbs. That means there are only about ~90-3/4 cups of flour in a 25 Lb. bag. It would be interesting to know how many Lbs. of cake flour you see him carrying.

Why do they use 1.63 Lbs. of H&S Mix in Australia when Canada requires a bit more than twice that mount?

It all Varys on the KFC and what they Order ?
some stores order different size of items based on Sales or the preference they want to CHANGE OUT THE MIX ?
a smaller location may use different size items based on sales performances and time of day.
In some countries they say they have salt mixed with the Herb and Spices pre mixed.
All I know is 26oz may work with lower Flour amount.
ALL i say is more spice and herb % is required

From my trials:
I can easily get too much herb and spices out of a 26oz scaled mix. What I think is, "more is less" is the approach folks aren't thinking. For example you may need to go over 26oz adding more of this or that to make up for too much of something in your recipe. And, there is nothing wrong with that. If it takes 12-24% to make chicken you like great. But, what if you reduced some ingredients to let others shine? What if we are generally adding too much of one or two of the items?
When I eat KFC today. Which is not 1950,70,80 etc. I get the taste of Salt, followed by pepper, that lingering it has MSG feeling and the note. As mentioned once in an under cooked piece of breading I tasted garlic and clove?. Now I remember KFC having more flavor (less grease) in 1970. However, it would be hard for anyone to remember exactly how much better. I want to believe you could taste a bit more of the Herbs, and a more robust note. But that is a distant memory.
So I firmly believe everyone is right on this. If you get your amounts down pat. I think you can get to at least today's KFC in 26oz. If you don't then it's a game of add more this, add more that = 40oz. Now I also believe the cooking process, oil and holding is as equally important as getting the 11 spot on.
I will finish by saying I used to use AP flour. And I ended up 1.5 and experimented with double H&S. I went to cake flour and I had lots of flavor at 26. I also noticed that you can't sift/mix and move the H&S/flour combination too much. It takes effort to mix thoroughly.
