Correction: Changed out Mustard Seed for Dried Mustard:
200 g. Cake Flour 27.0g. Salt 10.0g. MSG 6.46g. Paprika 5.20g. White Pepper 1.75g. Black Pepper 1.54g. Dried Mustard 1.38g. Ground Ginger 0.96g. Celery Seed 0.81g. Garlic Powder 0.54g. Thyme 0.54g. Basil 0.38g. Oregano

To boost Eugenol I would suggest this modification:
200 g. Cake Flour 27.0g. Salt 10.0g. MSG 5.20g. White Pepper 3.50g. Paprika 3.50g. Basil 1.75g. Black Pepper 1.54g. Dried Mustard 1.38g. Ground Ginger 0.96g. Celery Seed 0.81g. Garlic Powder 0.54g. Thyme 0.38g. Oregano
My pure guess is that this will be better. It sums the Paprika and Basil, then assigns half the sum to each. Basil delivers the Eugenol. Reduced Paprika lowers the coating darkness of the cooked chicken.

One thing that intrigues me is the lack of both Sage and Savory. I believe I've stated before that I need to try a recipe without these at least once whereby to overcome any bias that has been compelling me to add them. One last potential change to Ledington's might be to replace Oregano with family related Marjoram, since some strong Oregano (like the Oregano in my kitchen) will overly dominate the and ruin the flavor, even at this low level. 200 g. Cake Flour 27.0g. Salt 10.0g. MSG 3.50g. Sweet Paprika 3.50g. Sweet Basil 5.20g. White Pepper 1.75g. Black Pepper 1.54g. Dried Mustard 1.38g. Ground Ginger 0.96g. Celery Seed 0.81g. Garlic Powder 0.54g. Thyme 0.38g. Marjoram All of these (sans MSG) would likely have been rather common items in the typical Southern USA kitchen back when CHS finalized his recipe in circa 1940. MSG can also be tried at 15 and 20 grams... deepfriednew101 , I value your opinion as to the recipe seen directly above. Are you in general agreement with lowering the Paprika, raising the Basil, and substituting Marjoram for Oregano? Do you think this recipe will deliver the 'note'. Or can you offer your own modification advice? Etc...

Is dried mustard powder the same thing as for finely ground mustard seeds? Or are they different?

I just noticed that 3.5+3.5+5.2+1.75+1.54+1.38+0.96+0.81+0.54+0.38 = 19.56 grams of H&S in 200 grams of flour.
When doubled, that essentially hits 40 grams in 400 grams, or 40 ounces in 400 ounces of flour square on the nose!
And thus it seems to be in rather high compliance with the conception of the 40 ounce bag.
And it even leaves room for the addition of 0.44 grams of either Sage or Savory in 200 grams of flour.... And it totals to 10 items, allowing for an 11th H&S.
Salt is generally not considered to be an Herb or a Spice, since it is mineral in nature, and not derived from living plant matter. Claudia Sanders should not have assigned a number to the Salt.

Final recipe, sorted in weight descending order. Could this come close to matching KFC?
200 g. Cake Flour 27.0g. Salt 10.0g. MSG 5.20g. White Pepper 3.50g. Sweet Paprika 3.50g. Sweet Basil 1.75g. Black Pepper 1.54g. Dried Mustard 1.38g. Ground Ginger 0.96g. Celery Seed 0.81g. Garlic Powder 0.54g. Thyme 0.44g. Sage 0.38g. Marjoram
Edit: Note that this places Sage right where Grace's Strong Blend places it, between Thyme and Marjoram, in position #10, and near the bottom of the pecking order.

We know that KFC has (or at least once had) Paprika.

This post got me thinking about doing a cook challenge for yourself. You could retain MSG, White and Black Pepper, Garlic Salt (or powder), and no more than 2 other ingredients you have as staples of your individual recipe. Anything else would need to be ingredients you've never tried or at minimum combinations you've never put together in the same cook.
For me it would have to include: rosemary, basil, celery seed (or salt), oregano, maybe parsley

Sage is the one ingredient I'd love to be able to get access to the weight of it in relation to the others. So far in all my cooks I have set it to between 0.35g and 0.50g for 200g of flour. It's always been half to 3/4 of the way down my list of ingredients by weight. Although I think folks like Ken have it around double that amount if memory serves
