The question is, why did the corporation and Ledington add Celery to it, yes they need to complete the 11 spices, but why Celery?
Maybe Celery is not one of the genuin 11.

DT Celery was listed on a KFC_OR allergens report which deepfriednew101 dated to about 1970 (as I recall). And Mustard Powder was listed on the same report. A recent thought of mine is that Coriander may not have been one of the original 11.

I read many allergens reports around the worlds, some has no celery or Mustard, some has only one of them, and some has both of them, Marjoram was listed too in one of the reports I saw, since there are different recipes around the world, we need something old, maybe this report from 1970

Celery is just like Garlic and Onion, if it is in the recipe it has to be listed, because they are considered as food rather than spices.
They listed Garlic.

it was listed on OLD Nutritional sheets and allergen sheets that were on the Trays that the chicken was served on.
They were call tray Liners.
It may be hard to track down those sheets NOW.

But the try may contain many other things, Crispy Chicken, Hot wings. Gravy, we know Celery is used in KFC Gravy.
Its hard to tell.
