Awesome. It’s about the pepper at this point. I’m going back to my last successful recipe and focusing on pepper only for the next couple cooks. I can’t see how others get the Peppery KFC taste with 2.5g black and 2.5g white pepper into 200g flour. Many supplement B&W Pepper with a lot of Cayenne Pepper. Witness Dustin.

I think my next cook will be 4g White Pepper and 3g Black Pepper into 200g flour. Shy of Deep Taste but I'm going to take a couple more steps as required.

White pepper Black Pepper Sage Paprika made up 45% of our last recipes there was ZERO issue with to much Pepper of otherwise

My new version of Extra Crispy, double coated, deep fried chicken:
DTXC 037
2 cups Flour
1 tsp Black Pepper 1 tsp White Pepper
1/2 tsp Oregano 1/2 tsp Thyme 1/2 tsp Chili 1/4 tsp Garlic Powder 1/4 tsp Mustard 1/8 tsp Turmeric
4 tsp Salt 2 tsp MSG 2 tsp Brown Sugar

Since I am still working on the coating, I wanted it to have more dark specks , I did a re make of DTXP 787 recipe with 14g Pepper, the result today is promising, and I had the same Pepper sensation, I still have to try different types and combinations of flour other than starting to add the suspected spices. DT

This is a photo of the real original recipe, today I had the same amount of dark specks on the pieces, also I am trying different types of Flour to match this coating. DT
