I thought I'd share a simple but wonderful homemade Italian Salad Dressing mix that I make for my wife and myself. Since it has no relation to KFC, I figured I'd post it here.
Combine in a sealable/shakeable container:
1 TBSP + 1 TSP Dried Red and Green Bell Pepper Flakes 1 TBSP Common Granulated Table Sugar 1 TSP Garlic Powder 1 TSP Onion Powder 1/16 TSP MSG 1/16 TSP Xanthan Gum Powder 2 TBSP Water 1/4 Cup + 1 TBSP Ordinary Distilled White Vinegar (5% Acetic Acid in strength)
Combine all of the above, cap (seal), and shake the container vigorously such that the Xanthan Gum is well dispersed and doesn't clump up, then lastly add:
1/3 Cup Olive Oil, + 1/3 Cup Saflower, (or) Sunflower, (or) Canola Oil (for 2/3 cups of total Oil)
Shake well again, and store in the Refrigerator overnight, then enjoy sprinkled over Salads. If it stays mixed and does not get overly thick with the passage of time, the Xanthan addition is adequate. If it separates use a bit more Xanthan next time, and if it thickens too much use a bit less Xanthan next time.
NOTE: If you mistakenly add the two oils before you add the Xanthan Gum (thickening agent), it will likely clump, and getting it to un-clump is rather difficult...

If you would like to turn the above into more of what I would refer to as a Mediterranean Style Salad Dressing, with a bit more bold robustness, add as part of the dry ingredients 1/4 TSP of dry 'Italian Seasoning' blend. I generally prefer it without this, but some prefer it to be added.
You can always add it after the fact, but you can't remove it once it has been added...

If you feel that a bit more Xanthan Gum absolutely must be added, pour the contents into a bowl, and whisk while gently sprinkling another pinch of Xanthan Gum across the surface. Then pour back into the serving container.

Italian Seasoning is a blend that typically consists of of Oregano, Thyme, Basil, Rosemary, and Sage (in that order, as listed via descending weight).
