Do you remember when I stated that my wife thinks Deep Fried Chicken spiced with only ground Celery Seeds would taste as good as or better than KFC?

My wife and I split the recipe seen in the 1st post to this thread in half back when we Air Fried it, and still have half. My new plan is to add to what remains in a manner pursuant with chasing the 'note' as follows:
Add this to the remaining half of the original Celery Seed Recipe:
100 g. Cake Flour 14.2g. Bakers Salt 12.5g. MSG 1.45g. White Pepper 0.50g. Fine Black Pepper 0.50g. Coarse black Pepper 0.75g. Celery Seeds 1.00g. Allspice 0.50g. Tarragon
Whereby to wind up with this new and revised 'note' chasing recipe:
200 g. Cake Flour 28.5g. Bakers Salt 20.0g. MSG 3.00g. White Pepper 1.10g. Fine Black Pepper 1.10g. Coarse black Pepper 3.00g. Celery Seeds 1.00g. Allspice 0.50g. Tarragon

It must be remembered that despite the original recipe calling for 20 grams of MSG, a last minute change was made and only 15 grams of MSG were added.

When Celery Seed achieves a certain percentage of the H&S it expresses one of the most wonderful spice aromas imaginable.

Check out the "May Also Contain Allergens" column. It says (among other things) Celery and Mustard and Sesame. Is that a hint? kfc-uk-brand.s3.eu-west-1.amazonaws.com/drupal/production/2020-01/nutrition.pdfPS: Who among us has tried adding Sesame Seeds? PPS: It is not uncommon to see Malted Barley as an ingredient in Wheat Flour. It is listed as an ingredient in the Sapphire Flour my wife uses to make pie crusts. PPPS: If they are using Wheat Flour there is inevitably going to be Gluten. Why then place this in the "May Contain" column?

Certainly celery and mustard standout in that listing. Could they have sesame seed oil? Sesame Oil has loads of undeniable flavor. I'm not certain of its smoke point temperature though. Very common in oriental stir fries.

Refined Sesame Oil has a high smoke point. Unrefined does not. It may prove costly if adding the oil to ones current oil proves to be a bad idea. I would think it safer to simply add some finely ground Sesame Seeds to the coating mix.
