Oven Broil Pans have been below Ovens in the Pan Tray for 50 years and sold with Stoves Does the chicken sit directly over the water in the broiler drip pan? For how long, and at what temperature?

I have done both. Little water in the bottom and just tented foil. I find for the low volume I cook. The tented foil works for me without need for water. And every time I add a more chicken I turn over the previous batch. Try it, you might like it.

Of course if the oven is held at only 180 degrees F. there will be no direct steam per say, but (for the case of a water pan) there should be elevated humidity to some degree.
I seem to recall reading somewhere that KFC ovens their chicken at 180 degrees F. and (I assume) at some unknown to me high humidity level. What is the detailed reality here?

My radical thought for the day:
Do any of the many silent lurkers on this forum ever actually cook any of our recipes? And if not, why do they lurk? And if they do cook some of our recipes, why do they never offer up the politeness of valued feedback (be it positive or negative)?
How many lurkers are bots? How many lurkers are spying operatives?

My radical thought for the day:
When an ingredients label states "White and Black Pepper" (or visa-versa) this in an indication that both share the same weight. I.E., if one of the two is 5 ounces, so must be the other one...

This KFC bag image places Spices ahead of Herbs. This bag is much younger than the ones I mentioned and further apart from the OR in my opinion. But this is only my subjective view. Also, seems like pepper is listed under spices here. So logically spices is higher.
