We Don't mess with the Flour amount you need a Decent amount of flour to Coat and Press the Flour on the Chicken using to little flour does NOT allow Great Coating.
We have been Adding Buckwheat flour into our Last few Mixes the Buckwheat makes the Flour more adhesive on out test.
All Purpose Flour 85% Corn Flour 10% Buckwheat flour Light Color 5%

Please define your LESS Flour then?
When Anyone has ever made a reference with less flour it means when the recipe calls for 18Lbs and you use 16lbs ?

The difference in our perspectives is that you are a commercial operator, and I am not. You are thereby restricted to seeing this only one way, and I am not restricted.

The Food industry has evolved where you cook to the PEOPLES needs and Cater to there wants and there Recipes for Weddings and functions

I'll try to simplify this.
Early on when the whole 26oz bag compliant thing was what I was working on. I had mixed enough seasoning for 400g flour. I halved my seasoning and made up a 200g flour batch. It was weak. So I took the remaining seasoning that should have been mixed with 200g flour. But mixed it instead with 150g flour.
I could do this as I only was doing a dozen wings. If I ran a business. I would have had to add more ingredients to my seasoning.
However outcome the same!

My radical thought for the day:
Once a path to Nirvana has been found, as it appears we are now on the very cusp of achieving, the game will change to one of discovering how many additional paths to Nirvana can be discovered.
With my "Herb Free" recipe contemplations, I'm already beginning to seek new paths.
And thus the fun goes on.

My second radical thought (purely speculative current perception, subject to change as actual facts present themselves) for the day is that Allspice likely delivers too much Cinnamon_like character and not enough Nutmeg_like character for it's inherent amount of Clove character. As a consequence of this perception, Allspice is beginning to fall out of favor with me.
My current speculation is that adding 1.00 grams of Allspice to a recipe is effectively on the ballpark order of adding: 0.60 grams of Cinnamon 0.20 grams of Clove 0.20 grams of Nutmeg
If for Allspice the Cinnamon and Nutmeg like character expressions were reversed, I would be much happier with regard to continuing the practice of using Allspice. But as it presently stands, my perception is that the use of Allspice leads to a detrimental Cinnamon surfeit (or overload) situation, combined with a detrimental Nutmeg deficit situation.
Edit: As opposed to my speculation with regard to its Cinnamon and Nutmeg character delivery, it is my firm belief that 1.00 grams of Allspice does indeed (if not actually in fact) deliver an equivalent of 0.20 grams of Clove equivalent.
Edit #2: It was my oldest Daughter who assessed that my early-on best recipe (my 'As Cooked Recipe #4') would be much better if it didn't have as much Cinnamon in it. #4 didn't have any Cinnamon in it. I should therefore have realized this situation as far back as about a year ago. But instead I continued to use Allspice...

One (and perhaps the only) upside of the above is that if my compositional presumption for Allspice is accurate the following blend should give you 2 ounces (= 56.7 grams) of a fairly respectable Allspice substitute:
34.00 grams Cinnamon 11.35 grams Nutmeg 11.35 grams Clove
And this blend may prove to cost less than pure and real Allspice.
