If you are adding enough of any one individual H&S whereby to uniquely identify it by taste, you have added too much, and will not evolve the full harmony of the note. Exactly what I have been chasing. As mentioned before. I fell into the trap of you need a ton of spices. That's what's "missing" from most recipes yada yada. You certainly need the right amount. But it's not overly high, all together they play one role. |

I wonder if one might develop the note via combining only these ingredients: 200g. Flour 28g. to 30g. Salt 7g. to 15g. MSG 10g. to 12g. B&W Pepper 0.25g. to 0.75g. Allspice 0.1g. to 0.2g. Anise Seed Oops, make that 5g. to 6g. of combined B&W Pepper. Sorry about that!!! |

My radical thought for the day is:
Should we be diligently scrutinizing (and even analyzing) recipes such as 99X and Grace's, etc... whereby to determine the likely H&S present within KFC_OR, in light of the presumption that various of lawsuits launched by KFC have likely forced these non KFC affiliated companies to alter their recipes?

I seem to recall that the outcome was they could only use maybe 5 ingredients outside of salt and pepper. And I’d assume MSG. But is that 5 known to them KFC ingredients or 5 substitutes?
If sources are correct. There are matches amongst those. But why is the question.
And, I think both recipes given to Glen are post lawsuit so already built in bias as to how OR they are

The Recipe GLEN has is from the 1980's I have POSTED the source that surfaced in the late 1970's, regarding the recipe Glen used.
The 1966 Court Case specified Salt, Pepper, MSG and not more then 5 other Spices.

Do you think that to CHS his original "core" of Flour, Salt, and Pepper (which is how his chicken was initially served at his combination gas station and restaurant) are not to be counted among what would subsequently grow to become 11 "other than core" spices and herbs? Are you in general agreement with Deep Taste that Tarragon was eventually replaced by Marjoram and/or Oregano, but only by various of incorporated copy-cat organizations who wound up doing battle with KFC in court? |

The Original PRE - 11 Spice and Herbs was ONLY Flour, Salt, Black Pepper.
Oregano was a separate item Mexican Oregano AKA Sage
