I have Powdered Milk, but I don't have any Powdered Egg. I've been using 200 grams of Cake Flour and 2 grams of Dextrose as my flour base for the H&S, etc... I'm wondering if I might get closer to the flavor of KFC_OR if I changed this flour baseline to 180 grams of Cake Flour plus 20 grams of Powdered Milk plus 2 grams of Dextrose, and then got the egg into the picture via doing a standard real milk and real egg wash just as I have always done? All opinions are welcome.

I have always though to TRY a WHITE CAKE MIX as a blend into the AP FLOUR?
The Box White Cake Mix or Bag White Cake Mix has TONS that might cover the ingrediencies.
We Never use Premade Cake Mix BUT today while at the wholesale Grabbed a Big Bag for experimental purpose.

I watched a YouTube video where a Woman added powdered Coffee Mate creamer to her seasoned flour mix,and said it made a big improvement.

So it seems that by adding Coffee Mate one is adding Dextrose sugar. Dextrose is Glucose.

Kraft had suggested that be used when Brown & Massey originally hired the Collectomatic engineers, Kraft, to help with the Recipe issue they were having Kraft was helping with the Shortening and Powder Milk and Egg issue. Stange was dealing with the Pepper issue.

imo, if you want the true authentic kfc then you should use fresh milk and eggs. I use 1 cup of milk to two whole eggs and get great results as long as i whisk the eggs properly.

I'm fairly certain that this is how it was originally done back in the early days when the Seasoned Mix bags stated that they contained 'Dextrose'.

The patents mentioned using non-fat milk. I suspect there is a good reason. I find using almond milk and adding powdered whey helpful.
