A lot of Lactose (Milk Sugar) is being added to the flour every time a box of powdered Milk and Egg mixture is added to the Lug. Perhaps rather than adding 5-6 grams of Dextrose Sugar I should be adding 5-6 grams of powdered Lactose Sugar. thewholeportion.com/does-powdered-milk-have-lactose/

Who would have guessed that powdered whole milk is 37% by weight lactose sugar, and that powdered nonfat milk is 51% by weight lactose sugar? That has to impact the flavor. It could even be part of the 'note'. How many ounces (or grams) does the KFC carton of mixed powdered milk and egg weigh?

Gram for Gram Lactose has ~20% of the sweetness of table sugar.
Gram for Gram Dextrose has ~75% of the sweetness of table sugar.

It weighs 14 ounces. Which is ~400 grams. Can we assume that 300 grams are milk powder, and 100 grams are egg powder? If 300 grams are milk powder, and 37% of that is Lactose Sugar, then 111 grams are Lactose Sugar. 111/11340 x 200 grams of flour ~= 2 grams Therefore 2 grams of pure Lactose Sugar powder should be added to every 200 grams of flour.

0.5 grams of Dextrose delivers the same sweetness of 2 grams of Lactose. Alternatively, 0.5 grams of Dextrose should be added.

Clearly, when I was adding 5 grams of Dextrose, I was adding 10 times too much.

The powdered Milk and Egg carton actually weighs 18 ounces. So it's more like 2.5 to 3 grams of Lactose Sugar in every 200 grams of flour.
