Star-Anise gets its licorice flavor from Anethole. This as opposed to Tarragon, which gets its licorice flavor from Estragole.

Star-Anise is roughly 2% to 5% oil by weight.
83% to 94% of the oil within Star Anise is Anethole.
There does not appear to be any Eugenol present within Star-Anise oil. (this one shocked me)
