I ground some Star Anise Pods today and then dipped my finger into the ground mix and gave it a good taste test. I was quite surprised to find that the 'straight up' taste was actually very pleasing, but it is seriously robust in Black Licorice flavor. More-so than for eating any Black Licorice Candy I've ever come across. It is very aromatic and flavor potent. I generally dislike tasting dried spices 'straight up', but this one really tastes good.
That said, unlike apparently many, I have never detected any flavor of Black Licorice within KFC_OR. If it's in there at all, I'd have to say it's not likely in there at more than 0.10 grams in 200 grams of Flour.

I believe star anise was used interchangeably with tarragon. The KFC original chicken does have a sweet licorice flavor.

I believe star anise was used interchangeably with tarragon. The KFC original chicken does have a sweet licorice flavor. Apparently some taste Licorice and some don't. My first taste of KFC was in 1959. I've eaten it ever since, and I've never perceived Licorice. A Sweetness of sorts yes, but Licorice no.

I had KFC today and I believe it had a Licorice taste. Anyway, tarragon is used in KFC. Star Anise was probably used as a replacement in the case where tarragon was out. I first thought the sweetness of the chicken was due to sugar but then I realized that the sweetness itself is a Licorice taste.

I think leaving out tarragon makes a huge difference in taste quality.

I think leaving out tarragon makes a huge difference in taste quality. We're becoming big fans of Tarragon here also.

Try grinding some Staranise and leave it for a couple of days, you will notice it degenerate on the taste rapidly, and more than any spice I've tried, after 1 or 2 weeks it will taste exactly like dust.
So it was not available, very expensive, and can easily be replaced with many other out of the shelf licorice spices, from a business stand of view it is not important to create the best chicken.
The last time I tried Staranise, and at one bite, Its taste show me I was certainly not on the right track and I stopped using it since.
But this is only my experience with this spice, others may have better results, the first one ever to try Staranise in a recipe was one called KidKneviel, Canada, from the Colonel Kitchen old Forum.
