From all archives I have seen and Documents shown about CHS and the cooking deep fried skillet chicken is this his own words
It wasn’t until nearly two years after I opened my Corbin place that I started tinkering with chicken.
CHS open in 1930 in Corbin and Did not serve chicken first only served limited items what could be cooked and held warm for travels and the rest the family ate NO waist
CHS said he started cooking the way his mom made Fried chicken in 1932 Skillet Flour Salt and Pepper.
Prior to that he did make a creamed chicken not Deep Fried.
one of the first know chicken he made was a simple chicken with salt, Black Pepper, Red Peppers, Nutmeg and he said season very high, the cream sauce needs season
