Pressure Cooking items with a Bone or Keel, Drumstick, ETC Retain more moisture /Juice and cook Better in a Pressure Fryer. But can still have red color around the bone. even when cooked with a $35000.00 Pressure Fryer. It happens BUT some of it has ZERO to do with the cooking it has to do with the Injection process or pumping at the Chicken processor.
KFC has more complaints about under cooked chicken Red near the Bone then complaints about weak flavor chicken.
KFC standard is to either replace the piece of chicken people return to the counter if they are eating inside.
Current KFC Cook the Popcorn Chicken, Chicken wings, strips in open fryers and NOT Pressure Fryers
