This thread is dedicated to a Vital Key aspect of trying to replicate a 1930's Recipe.
The key point is the 1930's spices were grown much different, Harvested much different, and Rubbed, Stone Milled, Pressed, Dehydrated, All Different.
The Law for Spice's from the 1905's was like a ATF Law or Prohibition to Alcohol. The fines were Large to Spice makers and traders.
The pepper industry was one of the first scandal's ever and Major Fines hit ALL companies in the early days for weight violations.
The Only way a person can re-make a OLD recipe is increase the spices amount NOW. I DO NOT care what spice we compare now in 2021 to 1930 the Growing in 1930's was pure little chemical open air field grown hand picked Spices. NOW 2021 who the HELL knows ? BUT there are more stories which show the spices are typically blended with fillers and additive's for profit not quality.
My experience and if you watch Glen & Friend's he has tried to re create many OLD recipes, and usually says they are BLAND. BUT never compares the 1930's Spices to the 2021 spices, and says hey the spices have changed. I have NOT seen him attempt a side by side version and add 30% more spice to the dish and see how it taste, If I missed those episode please forgive me in advance for my comment.
Remember just because they used single ply toilet paper in the 1930's does not mean you still need to use single ply toilet paper in 2021. I challenge ANYONE to go replace ALL the double and triple ply toilet paper at HOME to single ply toilet paper and see what the family will say ? ? ?
I know my analogy may seem OFF the Mark BUT ARE THEY ?
