For those of you interested in seasonings that may or may not have been used in the OR, I have found some formulas in literature. I haven't yet tried any of them. Maybe some can benefit from the ratios and ingredients used.
POULTRY SEASONING FORMULA
The Spice Handbook, Chemical Publishing, 1975, New York:
White Pepper 35% Sage 15% Thyme 10% Marjoram 10% Savory 10% Ginger 10% Allspice 5% Nutmeg 5%
CHILI POWDER
Handbook of Spices and Condiments (Cultivation, Processing and Extraction), H. Panda, p. 121:
Chili Pepper 75-95% Salt 0-10% Cumin 1-10% Mexican Oregano 1-10% Red Pepper 0-5% Garlic Powder 0-5% Onion Powder 0-5% Coriander 0-2%
Spices, Condiments and Seasonings, Kenneth T. Farrell, p. 215:
Chili Pepper 85% Cumin 8% Oregano 4% Garlic Powder 1% Anticaking agent 2%

The last couple days I have been pondering again the use of seasoning blends that may allow us to expand past the "11" in our recipes. I have looked into this before with a a version of Lumpy's Sexton clone. So here are a few Poultry Seasonings in one spot.
Schillings copycat: • 2 teaspoons ground sage • 1 1/2 teaspoons dried marjoram • 1 1/2 teaspoons dried thyme • 1/2 teaspoon nutmeg • 1/2 teaspoon finely ground black pepper Place marjoram & thyme in a mortar & pestle (or spice grinder) and lightly process until powdered. Add remaining ingredients. Bell’s Copycat: • 4 1/2 tsp dried rosemary • 4 tsp dried oregano • 3 3/4 tsp dried sage • 3 1/2 tsp ground dried ginger • 3 tsp dried marjoram • 2 3/4 tsp dried thyme • 3/4 tsp ground black pepper Mix together and grind to fine powder in a coffee or spice grinder. Makes about 1/2-cup. McCormick’s Copycat: • 2 tablespoons dried thyme • 5 teaspoons dried sage • 2 teaspoons dried marjoram • 1 1/4 teaspoons dried rosemary • 1/4 teaspoon ground black pepper • 1/4 teaspoon ground nutmeg Measure thyme, sage, marjoram & rosemary to a spice grinder. Process to a medium grind. Add pepper & nutmeg, blend 5 more seconds. Lumpy’s Sexton Copycat: • 2 teaspoons sage • 3/4 teaspoon coriander • 1/2 teaspoon allspice • 1/2 teaspoon ginger • 1/2 teaspoon thyme • 1/8 teaspoon Black Pepper • 1/8 teaspoon savory
