From the comment on the other thread on this Forum
Dustin says Ginger is to High ?
When you look at other recipe and cooking Videos and Many many article's that have tested Many Many recipes
I have NOT seen one complaint that Ginger was set to High, on any recipe which has been tested even Kens recipes ? ? ?
I have seen some Ginger set at same values as other spices and NOT the lowest item on the Totem Pole its usually been in the middle range of spices.
So if many other Video bloggers Glen, Guga, Sam, and 25 other people who have done TV cooking with similar recipes to Claudia's which had Ginger at 1 spoon NOT one person complained NOT one person said its off the rails with Ginger ?
How is it that Numerous reports from people say GINGER. Even that they added Jamaican Ginger increased and sale sored ?
PLEASE answer how many reports talk about wrong ginger and not enough Ginger. Tommy Settle said there is NO STUFFING recipe which uses GINGER.
PLEASE answer any of the questions
WHY no other person mentions to High Ginger in any Video Glen, TV cooks, average people cooking ? ? ? are they ALL wrong ?
Why did KFC added Jamaican Ginger to OLD KFC spice

So Today I can pass this Information on as it was FREELY obtained Ginger WAS being increased in the 1970's to bags of SPICE and IT was Jamaican Ginger which was added to the NEW AGE SPICES ay that Time as they went to a Inferior Quality of Ginger.
The Franchise Owner has 3 Generations of There Family in the KFC Franchise and was franchised early on it the CHS Days. They were With CHS before it changed Hands to Brown and Massey.
They were using even the Marion Kay Original Chicken Seasoning. IT HAD GARLIC 100%.
They confirmed that Marion Kay 100% was forced to change the Recipe after CHS Death and the Court case ended.
Marion Kay Produced the Marion Kay Chicken Seasoning First, They then Changed the name to 99X and also they added Dominant One which is the Seasoning with Salt. They Indicated that there was a Drastic change in the Marion Kay to the 99X after the Court Case ended.
Salt was NOT in the Marion Kay Chicken Seasoning. when it was delivered to the Franchises who were using it. They USED it ON CHS SAY SO not KFC NEW AGE APPROVAL.

Just FYI, I actually own one of Todd Wilbur's books and the printed recipe is very different. This is his latest version, his "improved hack" as he would call it:

Found below on a forum and thought it might be interesting for some as I haven't seen them here before. First is a photograph from the museum, you can read the tin label in the mirror reflexion: "Ground Jamaica Ginger". Second is a screenshot about the wrong Ginger story.

Jamaican ginger is good stuff and so is jamaican allspice. Right now i'm using a "sogeri wild ginger" which is a very high quality ginger that i find to be as good as jamican ginger.

So I guess the road ends here for me. I cannot find Jamaican Ginger in the Netherlands and Germany. Not even online. I have good quality Ginger though. Organic, strong and fresh. How much better can the Jamaican version be?

I would advise you use what you have to your ability
WHAT if there was NO more Jamaican Ginger available would you stop making chicken or use what your have.
Currently in Canada we CANNOT get certain spices and herbs, or baking items like starches. We are R&Ding our recipes and yes some have taken a lesser quality then we once had BUT NOT by choice.
work with what you have.
