11 Herbs And Spices Mix with 2 Tsp of Salt, 2 Tsp of Sugar, 1/8 Tsp of Garlic Powder, 1/4 Tsp of Onion Powder, 2 Tsp of MSG, and 1 3/4 Cup of White Flour 1) 1/4 Tsp of Coriander 2) 1/8 Tsp of Cloves 3) 1/2 Tsp of Paprika 4) 1/4 Tsp of Ground Ginger 5) 1/8 Tsp of Oregano 6) 1/2 Tsp of Sage 7) 1/2 Tsp of Savory 8) 1/4 Tsp of Red Pepper Flakes 9) 1/4 Tsp of Basil 10) 2 Tsp of Tellicherry Black Pepper 11) 1/2 Tsp of White Pepper
I tried this recipe yesterday and came out nice but it lack sweet (possibly licorice) flavor that KFC original chicken has. Perhaps, I would like to use marjoram, tarragon, and cayenne pepper instead of oregano, red pepper flakes, and basil. Would that make a difference? Also, should I add star anise as well? If so, how much?

Star anise or fennel can bring that flavor

If you liked it and it seemed to miss one element. I wouldn't rip it all apart. Too many variables will plaque you.
I'd maybe swap Oregano for Marjoram straight up. Add an 1/8Tsp of either Star Anise or Anise seeds. And cook again

Should add the thought is both White and Black Pepper may count as 1 ingredient. So adding anise gets you to 11 if you worry about counting

I'm not sure. I haven't personally tried either. And I have been curious about them. I'd cook once with the couple changes as I posted above. Then next time sub out basil for Tarragon. Then you'd know what you thought each did to that recipe.
That recipe has good bones so to speak.

Allspice will lend some sweetness due to having within itself flavor characteristics similar to Cinnamon and Nutmeg, and Allspice will also contribute to achieving the 'note'.
I've only added freshly ground Star-Anise to a single batch, at a low level of only 0.15 grams into 200 grams of flour, and (to me) the chicken had a disturbing and inappropriately high level of licorice flavor which I've never noticed in 6 decades of eating KFC_OR, but I must add that the very same batch to which I added the Star-Anise also received 0.20 grams of Tarragon, which also adds its own low level of licorice flavor. If I had to guess, I'd say the licorice flavor and sensory odor delivered by Star-Anise is on the order of up to 10 times more pronounced than that delivered by Tarragon, weight for weight. If I ever add Star-Anise again it will be at only half (or less) the level that I initially attempted.
You should seriously consider getting a scale capable of weighing to 0.01 grams. Mine cost less than $10 US. Measurement by volume is highly problematic in my opinion.

As to the quantity of Allspice to add, I'm currently of the opinion that it should not exceed ~0.65 grams, or go below ~0.35 grams in 200 grams (ballpark 1.5 level metric cups, or 1.6 level USA cups) of flour, but YMMV. I'm currently finding that I like 0.65 grams when not adding any clove or Star-Anise.

I'm firmly in agreement on using Marjoram in place of Oregano. To my taste buds Oregano tastes awful in fried chicken. But YMMV.
Basil is actually something I would like to explore.
I doubt that Cayenne will be an improvement over Crushed Red Pepper flakes. Crushed Red Pepper flakes are far more flavorful. IMHO, most of the need to use Cayenne comes straight from pressure to strictly adhere to the 26 ounce bag theory.

I agree some of the Oregano are powerful
when using the 2021 Oregano I have went to blending a more tasting Oregano with sage to make it more the Mexican Oregano of 1930's
Basil will give a sweet flavor, and it has a great taste that make Pho soup flavor change with very little Basil so it has some depth to it when used.
we always used crushed sweet peppers and cayenne mix.
