this would be the first item to be replaced in a more commercialised approach. I agree with this statement. If it was ever there, it would have went early on in the evolution of the business. Folks have laundry lists of what was in KFC. Led me to the kitchen sink recipe I tried. If we made a batch with everything some expert claims was in KFC we would easily be into 20 ingredients. I may test to see if I think it was ever there and replaced by allspice.

flg Couldn't agree more. "No spice unturned". But that batch of supposed items would exceed 20 herbs & spices for sure, as there are other 20 herbs & spices behind those that had been replaced in the original OR, I mean the really really original OR...

Just checking in to see if anyone is still convinced that Green Cardamom is one of the original 11 H&S. I've never tried it yet, but it intrigues me.

But it seems from a cost perspective it most likely is out. I think I posted along the way that it could have been early on. But not for long. It would have to contribute the most to the note to have stayed.

Just checking in to see if anyone is still convinced that Green Cardamom is one of the original 11 H&S. I've never tried it yet, but it intrigues me. I just tasted some ground Cardamom. That stuff slams you with a pungent kick, and then it leaves a lingering distinct mint taste behind. I followed it up by tasting Cumin, and the Cumin quite literally didn't taste like anything while the Cardamom aftertaste was still on my tongue. I can't see where the Cardamom had any discernible lemon or citrus nature.

Both the Jolly Chef recipe, which seems may have been related to 99x at one point. And a couple older recipes, one by sonofagun. Which not only did it have pretty good reviews back in the day. On another forum one of the people that tried a lot of these over the years. Claimed it was the best of the old recipes he posted. Use Cardamom.
Being such an expensive product. I have always felt it would be the first to go in cutting costs. But that being said, it could have been there early on and stayed later than expected in the line up.
I have some and it does have a good kick. You wouldn't think you'd need much. I have cooked with it once in the kitchen sink. Which up to my last cook, was the best. I used 0.15g in 200g flour. It didn't stand out so I may have been able to push it higher. It sits before Thyme/Sage in the Jolly Chef seasoning and right after Savory/Sage in sonofaguns.

It's not a recipe, but a good roadmap by weight. What's of interest is that it's very similar to Glen's enough to make me think Glen's was a post lawsuit version of something similar to this. And if you consider replacing Cinnamon, Clove and Allspice with just Allspice. It could jump up to one of the higher spices. Also, I have taken Glen's, this one and sonofaguns. Put them into a spreadsheet and tried to normalize them a bit. For example; Sonofagun lists black pepper, but no harm for now representing that as 3 multiple grinds. This makes it easy to see the differences and work formulas against them. I'm not yet at a point of sharing but will be soon. Glen and this one use Thyme and Sage. Sonofagun's Savory and Sage. Ingredient List/Composition SPICES (Black pepper powder, Cracked black pepper, Ground black pepper, white pepper, Ginger, Garlic, Corriander, Cardamom, Thyme, Sage, Cinnamon, Clove, Pimento, FLAVOUR ENHANCER E621) 1. Mix a 90g sachet with between 1kg and 1.5kg of flour, depending on your taste. 2. Mix between 100g to 150g of salt to the spice and flour mixture and mix well.
You'd want to add 90g to 1kg. Which I think works to 18g into 200g flour. And 150g of salt to total 30g into 200g flour.
Also scaling to 18g is interesting. In that it could help build the case that there was 4oz added salt in a 40z bag. All this to say these 3 interest me for now.
