I Need some help with some Math of 2021 KFC
KFC Canada 2021 Current Day Uses this Amount
18 Lbs. of Flour 3.3 Lbs. of Salt 3.3 Lbs. of 11 Herbs and Spices 200g of Milk and Egg Powder
Broken Down to All Grams
18.0 Lbs. Flour = 8165.5 Grams 3.3 Lbs. Salt = 1365 Grams 3.3 Lbs. Seasoning 1500 Grams 200g M & E 200 Grams
all divided by 18 parts
1 Lbs. Flour = 453 g .183Lbs Salt = 75 g .183Lbs Seasoning = 83.4 g 200 Gr M & E = 11.1 g
So if the New Age KFC Current uses This Formula and its Crap in 2021
453 g Flour / 75 g Salt / 83.4 g Seasoning / 11.1 Milk & Egg Powder ( M & E )
People find the New Age KFC over Salty and Under Flavored
Would one not then Base a Possible recipe at 450 g Flour under 60 g Salt and 85 g Seasoning to be a possible amount value to Make Home made Version of KFC
if a smaller batch then would base at
225 g Flour / 30g Salt / 42 g Seasoning / 5.5 M & E
if My math is Off or Out please correct it ?

So 453.6 flour plus 200g Milk and Egg powder = 653.6g
So a tad bit more than 12.5% salt and 12.5% spice ratio to flour

12.5% salt would boost me back up to 30 grams of salt for every 200 grams of flour mix (which for me means flour + dextrose + maltodextrin). I have been unhappy with the saltiness at both 27.5 grams and 28.5 grams, and 30 grams of salt tasted great to me (albeit that it was a bit high per my wife and oldest daughter), so I think I'll just have to go back to 30 grams.

I must inject here that both my wife and oldest daughter also think KFC's Original Recipe chicken is too salty.

240 grams of overall flour, salt, MSG, plus all added herbs/spices, times 12.5% = exactly 30 grams of salt

8,164.8g. Flour ÷ 18 = 453.6g. 1496.9g. Salt ÷ 18 = 83.16g. 1496.9g. Seasoning ÷ 18 = 83.16g. 200 Gr M & E ÷ 18 = 11.1 grams M & E

And when multiplied by 200/453.6 to equate it to 200 grams
453.6g. Flour x 200/453.6 = 200g. 83.16g. Salt x 200/453.6 = 36.67g. 83.16g. Seasoning x 200/453.6 = 36.67g. 11.11g. M & E x 200/453.6 = 4.90g.

Perhaps herein lies the problem:
Percents equate poorly to added flour only, and thereby (to have validity) percent must be applied to the sum total of all ingredients as opposed to flour only.
