This recipe was obtained in the 1980's it may have been around prior to this time but it was passed to Us in the 80's
recommended to try on some chicken
• 2 Tbsps. Salt – can adjust for preference
• 1 Tbsp. MSG (Accent)
• 1 1/2 Tbsps. Black Peppercorns – Can adjust for preference
• 2 Tbsps. White Peppercorns – Can adjust for preference
• 1/4 tsp Allspice ground
• 3/4 tsp Caraway seeds
• 1/4 tsp Celery seeds
• 1/2 tsp Coriander
• 1/2 tsp Mace
• 1 tsp Onion Powder 1 tsp Garlic Powder - can be adjusted for preference • 1 tsp Paprika
• 1/4 tsp Red pepper & Cayenne
• 1/2 tsp Sage rubbed
• 1/2 tsp Tarragon ground
• 1/2 tsp Thyme

2 cups of AP Flour Wheat and 1/2 Cup of Corn flour

I quickly converted Deepfried101's 80's chicken recipe. Obviously not accurate but went on charts I have used in the past.
250g All purpose flour 36g Salt 12g MSG 33.5g Pepper H&S
Ratio to 250g of flour:
14.4% Salt 4.8% MSG 13.4% Peppers, H&S
Compared to one of my recipes made with 200g flour. I'd be at:
12% Salt 1.5% MSG 5% Peppers, H&S
Pepper ratio of the above recipe runs about 10% higher then my latest recipe. Based on total weight of all ingredients net of Salt and Flour. This one is around 52% I'm generally around 40%

Sorry noticed after there was an additional 75g of corn flour:
New ratio's:
325g of Flour (AP and Corn)
11.07% Salt 3.69% MSG 10.30% Peppers, H&S
Compared to one of my recipes made with 200g flour. I'd be at:
12% Salt 1.5% MSG 5% Peppers, H&S

If I was going to make this and I might. After running through some numbers. I'd be real tempted to lower both black and white pepper by 1/2 Tbsp each. And leave everything else alone.

I think this recipe was made when the Peppers were in transition with NEW AGE KFC
Always a good Idea start lower and work the way up easier to add then try and water down a recipe.
