On another forum one of the members was gifted an Herb & Spice bag for KFC Extra Crispy. It says it is to be added to 25 Lbs. of flour, but the thing I found interesting is that it only weighed 21 ounces (594 grams by actual scale weight), as opposed to 26 ounces for an Original Recipe Herb & Spice bag. This is in keeping with roughly a week ago when my wife and I bought a mixed bucket of KFC original and crispy, and when I commented that the crispy is seriously lacking in flavor in all areas by comparison to original.

I wonder what was in the 5 ounces they left out?
Crispy tasted less peppery, and also less salty, but also less herby and spicy. Hmmmm???

I wonder if all KFC does is package 21 ounce bags of the same stuff that is packaged at 26 ounces for original? 21/26 x 100 = 80.77% of the goodies packed into original. Hmmmm again?

The Extra Crispy Contains
Processed from: Salt, Leaving Agent (Sodium Bicarbonate, Sodium Aluminum, Phosphate], Corn Starch, Monosodium Glutamate, Dextrose, Spice, Onion Powder, Spice Extracts, Extracts of Turmeric, Annatto

The weight difference is loss of Yeast and exchanged for higher starch.
There are Higher Extracts added to the Starch in the Crispy Coating Mix and Less real Spices and the Extract does not have the same weight when mixed with the starches as using Pure Ground Spices.
I have a formula somewhere in the computer regarding how many liquid ounces or drops are required for real Spices. I Only recall that extract mixed with a carrier like corn starch, potato starch ETC is Lighter in weight then Real Ground Spices
