when you look at History Turmeric was used as a Medicinal Item originally and was carried on ALL wagon trains and Medicine Men Snake skin sales men. It was sold By Pharmacy More then it was the General Stores. BUT it was in many or most house holds. It was not listed in MANY recipes of the Early Era.
It was and has been used as a color agent in Yellow Mustard also from the beginning.
As for the use of Turmeric it was used in KFC when they started to Push the Golden Brown Fried Chicken / Crispy Fried Chicken.
KFC found that the Golden Fried Chicken Coined phrase was a BIG THING for there chicken crisp lovers
I personally have found there are some people who when eating the fried chicken seasoned with turmeric Do not care for the taste. while other Do Not seem to notice it. Its one of the ingredients that fall in the category like cilantro there are either you hate it or its not a issue.
KFC New Age Corporation has used it.
I will say that Turmeric does stain paper and cardboard when left on it. A orange or yellowish color.
There are Many older soup Packages that listed Turmeric from the 1940's in the label ?
It does have one of the Earthier Flavors and a Pepper after taste

Some day I'll have to add some Turmeric to my mix.
As purely an aside, I really like the taste of a small amount of Turmeric powder when added to Mac & Cheese. But then I happen to favor a blend of white cheddar and Philadelphia (type) cream cheese in my Mac & Cheese, so Turmeric gives its color a boost in the yellow direction that seems to be what is expected. I first picked up on this years ago when Stouffer's Mac & Cheese listed Turmeric as an ingredient. But now I believe it lists Annatto. And it doesn't taste as good... The quickest way to ruin Mac & Cheese (in my opinion) is to add Velveeta (type) cheese to it.

Therefore approach the potential for Turmeric's peak flavor benefit from the low side.

One thing I have noticed is that with the combination of White Cheddar and Cream Cheese, if it gets overcooked even slightly it rapidly gets dry and tough. Some Sour Cream may be just what is needed to protect against this.

Large size Elbow Macaroni, or Shells 1/2 stick butter 1 teaspoon salt 1/2 teaspoon turmeric 1/4 teaspoon white pepper 1 cup Cabot Sharp White Cheddar, shredded yourself 1 cup Cabot Monterey Jack Cheeze, shredded yourself 4 ounces Sour Cream 4 ounces Phili Cream Cheese

The turmeric is something that has been used in many Commercial Mac and Cheese
it has a more earthy flavor, for more flavor a Celery salt, Cumin, have more flavor.
I have found Turmeric is a love it or leave it for spice BUT it is used in MANY MANY dishes people never know it's in?
It does have a great Flavor, I prefer mixing it with other spices and rarely use it as a single stand alone spice. I have used it in some cream sauces and Pasta and its very good BUT I also love the taste of it.

NEW AGE uses turmeric and list is a color additive not a spice and herb
When you use turmeric as a color agent in cooking they do NOT separate out the Taste and Flavor or Turmeric in the seasoning prior to use so there is FLAVOR profile of Turmeric in the KFC Chicken

I like turmeric, and grew it successfully, but if you use it, then the vials are out completely. No need to explain. You just can't throw everything in.
